Baked Kale Chips
These are great. I have tried them both with curly kale and with the Russian red kale. My boyfriend likes the curly better for the crunch; I kind of like the red Russian better because there is more flavor. They are also good with a little paprika or cayenne pepper. The one problem I have is that regardless of which one I make, I can't get them to stay crisp by the next day. At first I thought it was because I had put them in the fridge, but they still went soft when they were at room temperature

Ham and Beans and More
Mostly used the recipe as stated, except that I left out the bacon and used three cloves fresh garlic in place of the garlic powder. I added a little basil and red cayenne pepper. I only used the 4 cups chicken broth (no water), and the thickness seemed great

Hidden Veggie Meatloaf
This was great. I doubled the veggies and used 2 pounds extra lean ground beef. I also doubled the oats and used an extra egg. It was enough to make 2 large loaves. It could have used a little more ketchup. It did fall apart a little, so I think next time I'll use another egg.
