Broiled Tilapia Parmesan

Fantastic for my husband, who eats fish because he should, not because he actually likes it. I made this, a side of steamed broccoli, and some buttered egg noodles and it looked really pretty and fancy for all the ease of preparation. I used really fresh Parmesan and basil, used celery seed instead of celery salt because the cheese is salty enough. I sprinkled a bit of paprika at the end for color, but that was totally unnecessary as the fish was really tangy and flavorful as is.

Best Fried Green Tomatoes

My husband had never heard of them, but he ate three or four fried slices before I had to pull them away from him. The greeness is important, the tomatoes must be almost pinking up with the inside juicy already. Too unripe, and they are bitter and give you a tummyache!

Emily's Super Eggplant Sauce

Nice way to put eggplant on the menu. Really sweet and tangy. Be sure you really cook the eggplant and other vegetables until very soft. Served with turkey cutlets and garlic bread for a very easy and healthy meal. Husband ate double serving. Added mushrooms the next time and less water to compensate, that was a good variation, so was zucchini...

Big Ed's Cajun Shrimp Soup

Thank you, Ed! My husband is also an Ed, and we thought it would be fun to try this soup just on the name alone. I sure am glad we did. I've made it as is and it was a wonderful soup for a cold day. The shrimp were perfectly sweet and tender, and the spices were perfect for opening up the sinuses. Watch the amount of salt and heat because this soup is bold and thick. I couldn't decide between this recipe and the one for Killer Shrimp. We were lucky to live near NoHo Killer Shrimp restaurant for a few years. I like the veggies in this one way better, but I adore the herb, butter, and wine in the Killer recipe, too. The next time, I wanted more broth and less mush. Used converted rice to avoid porridge. Added a can more of low sodium chicken broth, white wine for the water, and up to a cup more chopped vegetables (classic Cajun onion, celery, bell pepper, carrot mix) and a pinch of rosemary, basil, and oregano to cut the saltiness of clam juice.

I liked it, but it's one of those recipes that succeed or fail depending on the quality of your ingredients. You need the very best, freshly chopped garlic and basil, homegrown sweet tomatoes, fragrant (not rancid) extra virgin olive oil, freshly grated cheese, salt and pepper, and some al dente angel hair pasta. If you use supermarket tomatoes and jarred garlic and dried basil, it might fail miserably. I think it makes a ton of delicate garlicky flavored pasta as a side dish, not for people who want a hearty bowl of spaghetti marinara as a main dish.

Grilled Spicy Lamb Burgers

My husband screwed up his nose as I brought in all the herbs from the garden. Green didn't belong in his meat and potatoes. But I warmed up some fresh pitas, spread them with hummus and tzatziki, topped them with a traditional Greek salad, and put the patties and feta on top of it all like a giant taco. He wolfed it all down, and asked me to double the recipe next time.

Lana's Sweet and Sour Meatballs

I really was leary of sweet and sour that didn't use tomato, but this one was fresh and tangy. One time, I didn't have fresh green bell peppers, so I used canned roasted diced green chiles. By mistake, I pulled out a can of the spicy kind. It was actually fantastic and now party of my potluck rotation.

Ramen Noodle Frittata

I too, had my doubts about Cheddar Cheese on Chinese. It was worth a try because the hubby wanted omelettes and I only had three eggs. Halved the recipe and it smelt good and he devoured it all. The next time we made the half recipe, I sauteed a mixture of green and sweet onions in the butter first, then I added 1/2 cup well-drained leftover meat and veggie stirfry to the mix. Good thing to try when you only have less than a cup of leftovers. Leftover ham, turkey, peas, 'shrooms, fajitas. All blended pretty good in there!

Ukrainian Meat Filled Cabbage Rolls

I cut back on the salt, substituted garlic salt for plain salt and was liberal with the black pepper. The savoy cabbage was awesome to work with, much easier than ordinary cabbage. To make the rolls even, pull off all the leaves, then arrange them so one small leaf is nested inside a larger leaf, and use a small cookie/ice cream scoop to portion the meat. Wrap tightly like mini burritos. I couldn't decide between broth or tomato juice, so I mixed a small can of tomato paste into the broth and loved that flavorful variation, although it was still a bit soupy, so next time I will cut back on the broth. I didn't make the sour cream reduction sauce. Instead, I offered up a bowl of homemade yogurt and chopped chives or dill for the guests to spoon onto their own plates. My "meat-and-potatoes-only" guy ate seconds and thirds. I liked the light, fresh texture of the pork, without all the usual rice filler. Thanks so much for this recipe. I will be making this on many a cold winter night to come...

Asparagus Sandwiches

Was very good, but yes, bland. The quality of the bread used matters a lot. Tried with buttered bread, or adding a bit of flavored soft cheese spread(aloutte) to the mayo and that helped, too. Very popular tea sandwich.

Stuffed Peppers with Turkey and Vegetables

This is very tasty and healthy. I browned the onions for a long time first before adding the garlic the turkey and just cooked until no longer pink. Sprinkled in extra herbs and spices like cayenne, too, to taste. Sometimes, I use jarred sauce instead of paste and tomatoes. Sometimes, I sub in a tiny bit of other shredded veggies such as carrot, celery, or black olives, too. Husband is a meat and potatoes guy, but he likes these with cheese and carbs on the side. Very good change from the ground beef and rice standard recipe.

I used 12 baby portabellos halved the amount of butter, but they came out scrumptuous, anyways. My husband loved them, though I "forgot" to tell him they were full of clams and parsley: two things he says he doesn't like!

Best Ever Sausage with Peppers, Onions, and Beer!

We love this on rice! Use the richest beer and multicolor peppers and onions: it will look so pretty. Ran out of fresh herbs, used freeze dried, but the recipe forgives you. Smells much better after the beer cooks down. Other people's sausage and peppers seem so bland, greasy, and mushy in comparison.

Cocktail Meatballs I

I just use the Costco frozen Italian style beef meatballs. I add a bit of mustard and worcestershire sauce to the sauce, about 1-1/2 tbsp each and some ground pepper. Always the first thing to get finished at the office potlucks. People are amazed at the easiness of the recipe, once they wrap their heads around the idea of heated grape jelly glaze. It is so awesome that I always have to set aside a small batch for the hubby to eat for dinner with brown rice....

Deep-Fried Turkey Marinade

Much better than the injector type turkey I had been frying. Yes, it looks like a red turkey smeared with wet coffee grounds. But it smells wonderful and doesn't taste that hot. Blackened turkey?!? exclaimed my DH, but he adored the end result.

Southern Style Thanksgiving Green Beans

I used bacon instead of ham hock, because it was all I had. I liked the peppery, onion flavor, but not the color or texture. Tastes like the greens I usually cook. Smelled really good, though. Looking forward to these with the ham hock next time.

Poor Man's Beer Batter Fish

This is good for veggies, peppers, eggplant, mushrooms, squash, fish, shrimp, chicken, onion rings, and dill pickle chunks. Similar to an old Bisquick recipe. First, before you fry anything, make sure your oil has a high smoke point (peanut or canola) so it doesn't burn too quickly. Second, heat your oil plenty hot, because if it is too cold, your food will be heavy and greasy. A bit of batter should float and sizzle in there at the right temperature without burning up. Third, wash and pat your food dry and dust it with some dry pancake mix before dredging it in the wet batter to make it stick well. Fourth, use the best beer you can afford and two tablespoons of a salty seasoning like cajun or Old Bay for flavor. Fifth, don't crowd your food, fry in multiple batches if necessary, and fry in hot oil until the food floats to the top and stays there.
