Busy Day Barbeque Brisket

As with other reviewers, I strongly recommend following the recipe exactly. So when it says to put the slow cooker on "low" it means "low". Mine was on high, I forgot about it, and was only able to salvage 3 servings of meat from the center (on a positive note, the outer edges made good, jaw-working jerky). But wow, was that a tantalizing little bit in the center... Definitely a do-over.

Fennel Apple Salad

I was shocked at how much I loved this salad. The ingredients are an odd combination but they go together really well. Both savory and sweet, fresh and flavorful. I was able to use all the greens from my garden. Though I did make a couple minor substitutions - I used beet greens instead of chard because that's what I had growing. And I used a regular orange instead of a clementine, omitting the orange juice in the dressing. Finally, I used celery salt instead of celery seed and salt separately. The biggest surprise was how great the olives interacted with the rest of the ingredients. Fabulous! Each of the four servings this makes is pretty large. Add a hunk of meat, fish or a bean patty and you have a great summer meal.

Baked Slow Cooker Chicken

I used a mostly frozen bird, so couldn't stuff or season the cavity, but I did brown the outside a bit before putting it in the slow cooker (as other suggested). Turned out AWESOME. Best slow cooker chicken I've tried yet. While browning may have been helpful, keeping the bird above the juice (with foil wads or upside-down ramekin dishes) seems to be the real trick. I even forgot to turn down the heat on the slow cooker, but it was still perfect.

Authentic Thousand Island Dressing

This is wonderful, with ingredients that I would not have thought of, so obviously hadn't had authentic TID before. The only addition I made was to add about 2T of ketchup for color and a bit deeper flavor.

Citrus Salmon in Parchment

My favorite part of this recipe is cooking in parchment paper. It is a really clean way to cook salmon (no spatters) compared to the broil method I usually use, and minimizes the smell in the house. One thought for experimentation: use gomasio (sesame seeds and salt) and herbes de provence (which has dill in it) instead of dill and lemon pepper.

Sea Bass Cuban Style

This is heaven! My sauce was a bit too liquid because I used canned tomatoes from our garden, so I just put some pasta shells in the sauce to soak up the extra. Worked great.

Slow-Cooked, Texas-Style Beef Brisket

Very good. I would characterize this as a midwestern barbeque due to the sweet sauce. Substituting some of the ketchup for chili sauce made it better in my opinion. It would need a much less sweet sauce to be Texas style. Slow cooking in coffee is a bonus, though. You can adjust the sauce to individual, regional tastes easily.

Charley's Slow Cooker Mexican Style Meat

Used whole, dried poblano peppers for the diced peppers, a Vietnamese chili sauce for the hot sauce, and did not brown the meat nor trim the fat at the beginning. Just cut out the lumps of fat before shredding. Heaven!
