Busy Day Barbeque Brisket

As with other reviewers, I strongly recommend following the recipe exactly. So when it says to put the slow cooker on "low" it means "low". Mine was on high, I forgot about it, and was only able to salvage 3 servings of meat from the center (on a positive note, the outer edges made good, jaw-working jerky). But wow, was that a tantalizing little bit in the center... Definitely a do-over.

Fennel Apple Salad

I was shocked at how much I loved this salad. The ingredients are an odd combination but they go together really well. Both savory and sweet, fresh and flavorful. I was able to use all the greens from my garden. Though I did make a couple minor substitutions - I used beet greens instead of chard because that's what I had growing. And I used a regular orange instead of a clementine, omitting the orange juice in the dressing. Finally, I used celery salt instead of celery seed and salt separately. The biggest surprise was how great the olives interacted with the rest of the ingredients. Fabulous! Each of the four servings this makes is pretty large. Add a hunk of meat, fish or a bean patty and you have a great summer meal.

Really good with a good-quality, smokey paprika... I used fresh vegies since I could, and would reserve the dried vegies for a camp-food option.

Baked Slow Cooker Chicken

I used a mostly frozen bird, so couldn't stuff or season the cavity, but I did brown the outside a bit before putting it in the slow cooker (as other suggested). Turned out AWESOME. Best slow cooker chicken I've tried yet. While browning may have been helpful, keeping the bird above the juice (with foil wads or upside-down ramekin dishes) seems to be the real trick. I even forgot to turn down the heat on the slow cooker, but it was still perfect.
