Southwestern Egg Rolls

I made these for a football party last night and they were a huge success. I tripled the recipe and used eggoll wrappers until I ran out but then tried flour tortillas. I also served them with a jalepeno ranch dressing. Our guests loved them and my husband couldn't stop bragging about how good they were.

Buttermilk Cinnamon Rolls

I made these this morning for my Sunday School class. They did take longer than the time allowed but I think that was just me... I was afraid I made too much at first(I got 14 out of the mix) but I only had 2 rolls left. Perfect! That in itselt is a huge compliment. I did double the sugar and butter mixture. Whatever was leftover, I drizzled on top before baking. Next time I will try adding the sugar to the yeast as recommended. I did borrow the glaze recipe from the Overnight Cinnamon Rolls I. It was super simple and tasted great (I was in a big hurry this morning.) I will definitely do these again!!!

Feta Chicken

My husband really enjoyed this. I used more feta than what it called for and topped off the chicken breasts with extra feta and seasoning and it was great.

Easy Fried Eggplant

Cooked for my husband and he absolutely loved it. I even double dipped into the egg again and then dipped into grated parmesan cheese for an additional flavor. This recipe was extremely easy and I will definitely do this one again.

Jamie's Cranberry Spinach Salad

I made this for a dinner party last weekend and everyone seemed to really enjoy it. The almonds and the cranberries were great for a little texture change. However, next time I will definitely cut the amount of sugar back. I found it extremely sweet. Also did not have white wine vinegar so I used a little bit of balsamic and blended to taste. Gave out recipe to guests and will have to make this one again.

Caramel-Glazed Flan

I have never made flan, nor do I really like flan but chose to make this for a girls Mexican dinner party. It was a hit and so easy to make. I had very little leftovers but what was left, my husband managed to finish off when I got home.

Fiesta Shrimp Appetizers

Made this for a dinner party as an appetizer. Everyone loved it, especially my husband. Takes a few minutes to de-vein the shrimp but the effort is worth it. I used 12-15 count and the size looked great for presentation. The flavors of this dish makes it a repeat!!!

Tex-Mex Breakfast Pizza

I made this for my Sunday School brunch and served with salsa on the side. My husband raved about this and everyone loved it. Very simple to prepare and delicious. I used a colby/monterey jack blend. Will definitely make this one again but next time I will try shredded hashbrowns instead of diced just to experiment.

Grandma Johnson's Scones

This was too easy!! I have never made scones before today and they were great. I divided my dough and put craisins in half the batch and left the other half plain. While both were good, the craisins are the way to go. My cooking time was longer than recommended but they were worth the wait. Will definitely do these again.

Spicy Mango Salsa

I have made this twice so far for different parties and it has been a success both times. I serve this with sweet potato chips and it's really great. I used jalepeno instead of serano and it's still hot enough. This is a keeper for something unique and different.

Hummus III

Okay, this hummus recipe rocks...I make it every week and keep it in the fridge for snacking. I omit the olive oil and add double the garlic. It's wonderful. My husband has even been diving into my stash. It's great with carrots, with pita bread or on a whole wheat wrapper and as an added bonus, it's pretty healthy.

Caramel Pecan Pie

I've now made this twice. First for Thanksgiving and it went over extremely well. And then for a progressive dinner when I hosted dessert and put it into petite pie crusts. I will definitely make this one again. I added a few more carmels...just because I could, and it turned out wonderful both times. This is a keeper!!!!

Creamy Italian Dressing I

Very easy to make....whipped up for dinner party last night and my husband really enjoyed it. Quite different from reg italian dressing. Omitted onion and substituted an italian soup seasoning packet and still turned out fine.

Bobbie's Oatmeal Cookies

Cookies were okay (but not as I expected from reading other reviews.) They stayed in a mound-shape from the cookie scoop and didn't spread out at all. Had to flatten out to cook all way through. Mine turned out a tad bit on the dry side for some reason. Other than that, it was an easy recipe and the pecans gave it a very unique flavor.

Cinnamon Swirl Bundt Coffee Cake

Okay, I made this for a Sunday School breakfast and it was actually pretty good. My 'swirl' was more like a blur but it still tasted very good. I will add more of the cinnamon next time and maybe a tad bit of nutmeg too. I did have a little bit left over but my husband fixed that for me.

Chicken-and-Pasta Bake with Basil

I was really disappointed here. Too much pasta and the sauce needs to be doubled here. The description said it was "soul satisfying" but I think it should read more like the "soul should look elsewhere." Sorry, I just was not impressed.
