Fresh From the Vine Tortellini

I added a zucchini and an onion to the roasting stage. It may have overcrowded the oven and kept some of the tomatoes from cooking at the proper rate, so I will adjust for that next time. All in all, this was a delicious meal!

Penne with Mushrooms

Baked Halibut Steaks

This was absolutely perfect! I used a filet instead of steaks, so I had to up the cooking time a bit (about another 10 mins, but the toppings kept the fish so moist as it cooked!). The flavors work beautifully together, and it was a very easy meal to prepare. Only minor addition I made was after dicing the tomatoes, I sprinkled them with seasoning salt while I was cooking the zucchini and onion. I think it helped bring out more flavor, since other reviewers indicated the tomatoes seemed bland. I served it with a side of couscous with basil, sun-dried tomatoes, and spinach.

Sheila's Peach Cobbler with Pecans

While my batter never looked like cooked oatmeal, I decided to just go with it, assuming that all the peach juices bubbling in the skillet would make it work, and I was right! This was delicious, and I will definitely make it again!

Absolute Best Liver and Onions

My boyfriend loves liver and onions, so he asked me to make it for him...I was intimidated to say the least, but this recipe seemed easy to follow, and it turned out wonderfully! (At least, he really really enjoyed it...I admit I didn't have any.) Thanks for the non-threatening liver recipe!

Fresh Fruit Cobbler

This was definitely tasty, but the cooking time estimate seems way off. I left it in for 40 minutes or so, and the edges of the dish were totally golden brown, but the center was still uncooked batter.

Deep Dish Strawberry Pie

This is an incredibly well thought out recipe. I followed it to the tiniest detail, and it was beautiful and delicious! The chocolate in the crust is a very clever touch to keep it firm, and the filling combines for ideal texture and flavor. The whole berries at the base in particular make for a perfect element of beautiful fresh berry flavor in the sweet and tart filling.

Crustless Cranberry Pie

This turned out surprisingly well! I was a little skeptical when it didn't seem to fill the standard pie plate, but it spread while cooking. I sprinkled a little brown sugar over the top before baking, which made for a little extra sweetness and mild crunch to complement the tartness. I don't know about the leftovers, but fresh out of the oven with a little vanilla ice cream, this was delicious.

Perfect pumpkin cheesecake recipe! I realized the cream cheese bricks I'd bought are smaller than 250 g, so I made up the difference with more pumpkin. Also baked my own ginger cookies and used them for the crust.

Grilled Salmon Steaks with Savory Blueberry Sauce

This was delightful and not too complicated. I baked the salmon instead of grilling, and I seasoned it with oregano, thyme, lemon juice, and a sprinkling of ginger. For the balsamic, I used an orange vanilla variety from a gourmet shop, and it added a lovely flavor. This recipe is a keeper.

Pumpkin Pasta

For me it turned out pasty and bland. I tried so hard to get it to be more flavorful that it was almost overspiced on top of the blandness. The bites with plenty of cheese were the best. Started with a roux as advised by others, but once I added the pumpkin it was just a battle to get it to taste like much while trying not to let it get too thick.

Orange Carrot Cookies

I thought the recipe was missing a bit in the flavor dept, and I'm so glad I followed my instinct, because the flavor is light enough as I made them...without the changes I think they'd be quite bland. I added orange zest and juice to the batter, plus about 4.5 tsps of spices: allspice, ginger, cinnamon, pumpkin pie spice. The batter looks very wet, so the cookies are very cake like. I made cream cheese frosting and added another orange worth of zest plus half an orange's juice to that.

Smooth and Creamy Peanut Butter Pie

Took this to a pie party, and it was the first to disappear! For the crust, I pulverized a box of chocolate graham crackers and mixed in melted butter. Also went a bit heavy on the PB and slightly light on sugar...probably will cut back even further on the sugar next time.
