Red Skinned Potato Salad

This was a big hit at a holiday get-together! I only used 3 eggs and prefer the shortcut of precooked bacon pieces, but I didn't really change anything. We will be having this on Easter Sunday!

Tuna Pockets

My grandmother used to make these, but we always used sour cream instead of mayonnaise, and I use Mrs. Dash instead of dill weed. Excellent substitutions if you want to try them.

Seven Layer Salad

I had been searching for a recipe like this and it was a big hit at a family pitch-in. I substituted garden cucumbers for the cauliflower and made my dressing from low fat sour cream and ranch dressing.

Mom's Chicken

My kids loved this once I got them past the look of it. I made it with boneless chicken breasts in the crockpot and used grape jelly. I served it with fried rice, almost like orange chicken. Excellent!

Simple Slow Cooker Meatloaf

I made some small adjustments, used 2 lbs beef and 1 lb sausage, substituted salsa for ketchup, and used cheese crackers instead of bread crumbs - everyone loved it.

White Chili

My 7 year old loved it! I made this recipe with chopped turkey instead of ground. I also used about double the salsa that the recipe called for and used some chicken broth instead of water to thin it down, as it was very thick. Also used half pepper cheese half monterey jack, which made it not spicy at all if you are looking to make it mild. I will defintely make this again.
