Applesauce-Oat Muffins

Yes, they are bouncy but that is because there is no oil in them. Bakery muffins are tender because they are full of fat. I happen to be on the "ain't got no money" diet so I was scrabbling around for ideas to use what I have on hand. I used old-fashioned oats, a whole egg, dried buttermilk powder and home-canned applesauce. I took the advice to use 1t cinnamon and not use muffin cups. I had no butter so I just sprinkled a bit of brown sugar right on the batter. If I'd had raisins or dried blueberries I would have thrown them in. They taste just fine and will make a great healthy breakfast so I won't starve.

Beef 'n' Green Bean Pie

I tried this out of desperation. I had a bunch of tomatoes and green beans and I didn't want another salad. I gutted and cooked several tomatoes down into a paste and precooked my green beans in the microwave. I cooked some bacon until it was crispy and browned the onions and green pepper in a bit of the leftover grease. I only had a handful of grated mozzarella so it lacked in cheesiness. It turned out my green beans were stringy and awful so I had to pick them out of the finished product, but it was still very tasty. I will try it again with better beans and cheddar cheese. I'm keeping the bacon, though.

Zucchini Jelly

I used orange Jello because I've never seen apricot around here. I did have peach, but peach/pineapple didn't sound appealing. I used 4 1/2 cups of sugar and it is still very sweet. I will probably cut it to 4 cups next time. I wasn't sure if one package of Jello would make it set up so I threw in another package of plain gelatin. I also used 4 packets of "True Orange", a crystallized orange powder I just found and fell in love with. I had to cook the zuchinni for 3 hours on a low simmer until it turned clear. I'm going to label it Mock Orange/Pineapple Marmalade. My boyfriend had to admit that it was absolutely unrecognizable as a zuchinni-based product.
