English Royalty Chocolate Chip Scones
I really dislike baking so if I put the effort into it I don't like to be disappointed with the results. I was very pleased with these yummy scones - not too bland, not too sweet. I did add quite a bit more OJ than the recipe calls for so I could get the dough to a consistency that was workable for me, probably about a third of a cup. the orange flavor was still a bit mild for me. next time I'll also add some orange zest or extract. I'm lazy when it comes to baking so I cut into wedges, which I prefer anyway, rather than doing the whole biscuit cutter thing and baked for 14 minutes. Sprinkled the tops with a bit of sugar after taking them out of the oven and they were DEEE-Lish! I was supposed to take them into work the next day, but I didn't want to share. I lied and said I forgot them on the counter then ate the rest when i got home. I hope none of my co-workers read this.

Six Can Chicken Tortilla Soup
great recipe as is but I've always had trouble following directions :) I did drain my black beans and I used a 14 1/2 oz can of del monte diced fire roasted tomatoes with zesty jalapeno. I grilled 2 thin cut chicken breast filets on the Forman then shredded and added to soup instead of canned chicken, it's what I had on hand. Also added some smokey mesquite seasoning and some chili powder to the entire pot of soup. I like it a little hotter so I added a few drops of hot sauce to my bowl along with some sour cream and a few sweet chili tortilla chips. took some into my boss, I'm getting a raise. that's some good eatin!

Chicken Marsala
I've made this many times using this recipe as my base recipe and always do something different each time, either make more sauce, add more mushrooms, extra seasoning. It's wonderful as is or very easy to build on.Tonight I removed the chicken and cooked 2 pieces of bacon in the pan then removed them and set aside before making the sauce. Added 3 cloves of finely chopped garlic to the pan then before it got too dark put in my wine, sherry, and mushrooms. put the chicken back in, then crumbled the bacon and a bit of crushed red pepper over the top before covering and simmering.
