Peppermint Patties

I ended up only using three cups of the sugar and followed the suggestion of brushing on the chocolate instead of dipping it. I also added a splash of milk to the chocolate mix.

Southwest Chicken

This is so easy and fast to make. It's the perfect meal for a busy weeknight. We usually double the tomatoes and beans to give us enough for leftovers. We serve over brown rice and top with cheddar cheese or sour cream.

Cream Cheese Mints

I use an entire 8 oz package of cream cheese and almost an entire bag of powdered sugar. I also substitute 2 teaspoons of peppermint extract for the peppermint oil. I use a half teaspoon to make rounded mints instead of flattening them out with a fork. They are so delicious and easy to make. People can't believe how easy the recipe is and they can't get enough of these mints!

Quick Brownbag Burritos

These were delicious and quick. I made my own salsa ahead of time which I think added a lot to the burritos. I also cooked some frozen corn in the microwave and dumped it into the bean mixture a minute or two before serving.

Baked French Fries I

The time and temperature really do need adjusting on this recipe. I bake them at 400 degrees for twenty minutes a side. If you flip them they cook more evenly and you avoid having burnt fries. My husband says these are better than store bought. Plus, they are a lot healthier.

Festive Turkey Meatballs

My husband doesn't like anything with mustard in it, so I made these as is, but without the mustard. I wasn't sure how they would turn out without the mustard, but they were delicious.

Easy Decadent Truffles

I followed the suggestions of other users and used almond bark chocolate to coat the truffles. I also put the truffles in the freezer to harden them faster and make them a little easier to roll into balls. I made three different types: vanilla with white chocolate and walnuts, orange with coconut, and raspberry with almonds. So far I've only tried the orange with coconut and it was delicious. I made them way too big though because they are VERY rich.

Butterscotch Bread Pudding

My mom loves bread pudding so I wanted to make it for her when she came to visit. She loved the twist on regular bread pudding, and even I, who normally doesn't touch bread pudding really enjoyed it.

Greek Pita Pizzas

Since my husband and I don't care for olives, we did not use them. We also topped the pizza with mushrooms to add more veggies. We cooked it on our grill instead of using the broiler (way too hot to use the broiler right now!). We have eaten this at least one a week for three weeks in a row. It is delicious.

Cream Cheese Frosting

This is so easy and tastes delicious. I did do what others did and cool it in the fridge for a few minutes and then mixed it again before applying to my muffins and also left out the salt. I frosted 18 regular sized muffins and still have about two cups of frosting left. I'm hoping that it freezes well!

Feta Chicken

I did not have flavored feta on hand so I sprinkled my plain feta with dried basil. I also only had plain bread crumbs so I seasoned them with Italian seasoning and garlic powder. Once I got the hang of flattening out my chicken this was a very fast and easy recipe. My husband loved it and I thought it was very good too. We will definitely be having this again.

Zucchini Alfredo

I only do not give it five stars because I made some modifications. I use double the cream cheese, add 3-4 cloves of garlic, and add much more zucchini than the recipe calls for. This is a very good and EASY alfredo sauce. My husband even likes it and he has a thing against "white sauces".

Easy Olive Oil, Tomato, and Basil Pasta

This was really good. The only problem I had was mincing the garlic. I guess I'll have to practice that, or just used pre-minced garlic or garlic powder next time. I also added red, green, and yellow peppers, along with cucumber.

Grilled Apple and Swiss Cheese Sandwich

My husband can't eat apples unless they have been cooked (they make his throat scratchy). We are both originally from Wisconsin so we love our cheese. I thought that this would be a great way to combine two things he loves, but doesn't always get to eat. I was a little leery at first, but thought I'd give it a whirl. I'm so glad I did. Both my husband and I loved it. He has requested that I make it again soon. I used Swiss cheese and whole wheat bread (just store bought sandwich bread) and it was fantastic!

Cheddar Chicken Spaghetti

This was delicious. My husband and I ate almost the entire thing ourselves. The only thing I would suggest is to add more cheddar than the recipe calls for. I shredded almost 8 oz (we really like cheese in our house) and it really added a lot more flavor. We also added more chicken, but only because we had two breasts that were packaged together.

Eggplant Parmesan II

I didn't have Italian seasoned bread crumbs so I crushed Ritz and added my own Italian seasoning and garlic to it. Other than that, I kept the recipe the same. It came out great and I even had left overs, which heated up in the microwave at work pretty well.

Foolishly I left out the salt. It definitely needed the salt. I also substituted garlic powder for the garlic salt, which I will do again. I also added extra garlic powder since my husband and I both like garlic.

Mediterranean Potato Salad

My husband hates traditional potato salad because of the mayo, so I thought I would try this and see if we could compromise. Both of us ended up loving this recipe. I followed it exactly and it turned out great. A nice variation of a traditional potato salad.

Quick and Easy Brownies

This was my first attempt at brownies. The recipe is really good as is; I didn't make any changes. One end of my batter ended up thicker than the other. This meant I had to bake it longer than stated, but it's probably my fault. I'm not sure what happened, but I ate a brownie off of the thinner end and it was delicious. I can't wait to share these with my husband (if there are any left when he gets home!)
