Baked Ziti

Very bland as is. I sauteed zucchini, mushrooms, and onions and added that to the sauce. It was much better and was an easy way to add veggies.

Mediterranean Potato Salad

My husband hates traditional potato salad because of the mayo, so I thought I would try this and see if we could compromise. Both of us ended up loving this recipe. I followed it exactly and it turned out great. A nice variation of a traditional potato salad.

Greek Pita Pizzas

Since my husband and I don't care for olives, we did not use them. We also topped the pizza with mushrooms to add more veggies. We cooked it on our grill instead of using the broiler (way too hot to use the broiler right now!). We have eaten this at least one a week for three weeks in a row. It is delicious.

Southwest Chicken

This is so easy and fast to make. It's the perfect meal for a busy weeknight. We usually double the tomatoes and beans to give us enough for leftovers. We serve over brown rice and top with cheddar cheese or sour cream.

Cloverleaf Rolls

Butterscotch Bread Pudding

My mom loves bread pudding so I wanted to make it for her when she came to visit. She loved the twist on regular bread pudding, and even I, who normally doesn't touch bread pudding really enjoyed it.

Festive Turkey Meatballs

My husband doesn't like anything with mustard in it, so I made these as is, but without the mustard. I wasn't sure how they would turn out without the mustard, but they were delicious.

Zucchini Alfredo

I only do not give it five stars because I made some modifications. I use double the cream cheese, add 3-4 cloves of garlic, and add much more zucchini than the recipe calls for. This is a very good and EASY alfredo sauce. My husband even likes it and he has a thing against "white sauces".

Black Bean Rice Burgers

As is, the recipe is a bit bland for my taste (which is saying a lot because I'm not one for spicy foods). With some changes, these have become a favorite around our house. I dice up 2 or 3 serrano peppers and mix it into the burger mixture to give it some kick. Like other reviewers, I add bread crumbs to help it stick better. I also just sprinkle on some cumin and chile powder (I'm big on just eyeballing it...sorry for imprecise measurements). I also add more salsa (again, I just eyeball it). These are delicious with the changes I made but bland without, so I can't give it a higher rating.

Quick and Easy Brownies

This was my first attempt at brownies. The recipe is really good as is; I didn't make any changes. One end of my batter ended up thicker than the other. This meant I had to bake it longer than stated, but it's probably my fault. I'm not sure what happened, but I ate a brownie off of the thinner end and it was delicious. I can't wait to share these with my husband (if there are any left when he gets home!)

Easy Decadent Truffles

I followed the suggestions of other users and used almond bark chocolate to coat the truffles. I also put the truffles in the freezer to harden them faster and make them a little easier to roll into balls. I made three different types: vanilla with white chocolate and walnuts, orange with coconut, and raspberry with almonds. So far I've only tried the orange with coconut and it was delicious. I made them way too big though because they are VERY rich.

Spinach Cheese Pasta

This dish it a bit plain as is. I also substitute ricotta for the cottage cheese. I have also tried adding additional garlic (about three cloves), some black pepper, and a dash of salt. I topped it with some crumbled feta and thought it was much better than the first time I made it.

Rice with Black Beans

This is pretty bland as is; however I find that if you add a teaspoon each of chili powder and cumin along with some cooked corn and this dish became really delicious.

Cream Cheese Frosting

This is so easy and tastes delicious. I did do what others did and cool it in the fridge for a few minutes and then mixed it again before applying to my muffins and also left out the salt. I frosted 18 regular sized muffins and still have about two cups of frosting left. I'm hoping that it freezes well!

Feta Chicken

I did not have flavored feta on hand so I sprinkled my plain feta with dried basil. I also only had plain bread crumbs so I seasoned them with Italian seasoning and garlic powder. Once I got the hang of flattening out my chicken this was a very fast and easy recipe. My husband loved it and I thought it was very good too. We will definitely be having this again.

Fresh Tomato Salsa

The only reason why I am rating this three stars is because of the serrano peppers. I made a double batch of salsa and used only two serrano peppers in the entire thing. It was definitely spicy enough for me and even my husband who loves spicy food said that it had a good amount of spice. I would never use 5 serrano peppers. The salsa was fabulous though and will be making it again...just not with as many peppers as the recipe calls for.

Quick Brownbag Burritos

These were delicious and quick. I made my own salsa ahead of time which I think added a lot to the burritos. I also cooked some frozen corn in the microwave and dumped it into the bean mixture a minute or two before serving.
