Apple Carrot Muffins

This was an awesome and very forgiving recipe. I was looking for something to use the remainder of the total bran cereal I had purchased, but didn't like because it just falls apart in milk. Since there are no raisins in it, I added some raisins, I also added more carrot and apple than recipe calls for, and substituted vanilla yogurt for buttermilk, because I didn't have any. I added coconut and they came out amazing. I seriously had three for breakfast and almost couldn't stop eating them. YUMMY!!!!!

JIF® Irresistible Peanut Butter Cookies

I got this off of the back of a Jif jar. Good basic recipe. I like my cookies a bit sweeter though. They were also pretty salty with the baking soda and salt. Also, you are supposed to drop them onto the cookie sheet, so mine didn't turn out so round and perfect! But I have to say, even with all these criticisms, I am still enjoying these soft cookies with lots of milk!

I think there was too much butter, my cookies spread SO MUCH. They look nothing like the ones in the picture. It could be just me, since there were so many good reviews. I will try again.

Salsa de Tomatillos Como Las Asadas y Big Star

My father in law is from Mexico and makes the MOST AMAZING green salsa, having said that, I love this recipe. It has great flavor and uses authentic flavors and techniques. I actually didn't use the serrano chiles (all I had were 4 poblano) so my salsa is not hot, but very flavorful instead. Next time I will try using the serranos. I have a hand blender, and I used that to blend it up. If you use a regular blender make sure you clean it very well if you don't want your smoothies to taste like chile!

Creamy Vanilla Pudding

Great, quick easy recipe, the only reason I am giving it 4stars instead of 5 is that warm it was too sugary. I would reduce the sugar by a bit, it may be better cold. I didn't have milk in the house so I used canned 2%milk and some water and it turned out perfect. I didn't even temper the eggs, just followed directions completely and the texture is amazing. Totally impressed by how quickly this came together. I ate it with bananas, and cannot wait to try this adding chocolate. Didn't taste eggy at all to me. Edit: I made it again today, I used 2%milk, 1/3 cup sugar instead of 1/2 and 4tbs of hersheys cocoa, 4 tbs of cornstarch instead of 3 because the next day the pudding was kind of watery. It is awesome chocolate pudding. I love this recipe as a technique, more than a recipe!

Baked Slow Cooker Chicken

This is a great method of cooking your chicken. After trying this several times, my best hints are as follows: I brine the chicken in salt and water for several hours or overnight first. Then rinse, and COMPLETELY DRY the chicken as much as possible (With the paprika, it will help to brown the skin a little instead of boiling it!). Instead of the plain foil balls, I wash and wrap up potatoes in foil and make mashed potatoes with them afterward (I wrap them up because I don't want the chicken grease on them). I rub rotisserie chicken seasoning all over the bird and under the skin, and place the dry chicken w/ seasoning breast side down over the potato foil balls. There is no need to add any liquid, it will make plenty of juice.

Slow Cooker London Broil

Super easy, I followed the instructions almost exactly, but doubled the soup to make more gravy (didn't double onion soup). Served with mashed potatoes as suggested. Meat wasn't as tender as I liked, but probably was because we were short on time and I cooked on high for 2 hours and low for 2 hours, I think I would try this again at the beginning of the day, as suggested, 10 hours. We LOVED THIS GRAVY. Leftover meat, gravy and potatoes are going to be shepherds pie on Friday. VERY easy, good recipe.
