Beets and Greens

Delicious! This has opened my eyes to beets as I try to expand my vegetable horizons. Next time I might try microwaving the beets like potatoes in the microwave to save a little time with the roasting.

Cake Mixes from Scratch and Variations

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

This is super fast and easy to make and tastes delicious. I added about twice as much cumin as it called for because it is my favorite spice. It paired well as a side dish to grilled chicken but I also had a similar dish at a restaurant with fish. Next time I might try adding some sun dried tomatoes to add a contrasting color. I will definitely make this again

Best of Everything Veggie Burgers

Really good veggie burger with lots of flavor. I didnt want to wait for my rice to cook so I substituted some leftover oatmeal from breakfast. It turned out great! I made a bunch and put them in my freezer for a quick meal.

Flax and Sunflower Seed Bread

I was very pleased with the way this bread turned out in my breadmaker. It was soft and had a good rise. I was concerned that there was a little too much water in the recipe, and I did add a bit more flour. I also was concerned about just 1t of yeast, so I up'd it to 2t. Tastes delicious.

Oven Roasted Trout with Lemon Dill Stuffing

This was one of the best fish recipes I've ever made! I ended up wrapping the fish in foil and my husband used indirect heat on the grill to cook it at around 350 for 30 minutes. The fish came out moist and so flavorful. I added a lot more dill than was called for, and I highly recommend doing so. I also happened to use Pepperidge Farm herbed stuffing as the filling because that's what I had on hand. The recipe took me a while because I had to de-bone my fish, but it was well worth the effort. Everyone loved it... even my father in law who was scared to eat fish with scales. I highly recommend this recipe.

Roasted Beets and Sauteed Beet Greens

Delicious. I took the advice of another reviewer and combined the greens to the cooked beets then added feta cheese. The cheese looks beautiful against the bright red. It was delicious.

Tomato-Topped Cod

Tasty summer dish prepared with homemade ingredients from the garden. I used fresh basil and piled it on top and swapped yellow peppers for green. This added a lot of color to the dish. I also didn't have bread crumbs and used Pepperidge Farm herb seasoned stuffing mix instead. I also precooked the onions and peppers on a skillet before layering on top of fish. Very colorful dish... but I was disappointed that the fish didn't pick up much of the flavor. But if you mixed a bite of fish with all the goodies in the dish it was pretty good!

Creamy Chocolate Frosting

Very chocolaty and easy to make. I was just disappointed that it wasn't as light and fluffy as I had hoped. It was more dense and creamy. I made a 1.5 batch and it was just enough for my layer cake. Any less wouldn't have iced the entire cake. I will definitely use this again.
