Married for almost 16 years to my High School Sweetheart, I have 3 busy boys ages 14, 10 & 8, Homeschool while working fulltime, have been a nurse for 7 years, and I love, love, LOVE to cook!
My favorite things to cook
My favorite things to cook are of course Italian and Southern foods, but I make it my mission to introduce my family to lots of international food. My passion is desserts...its what I excel at :)
My favorite family cooking traditions
We don't really have "traditions" I guess, but since we are in the south we always have turnip greens, fried chicken, black eyed peas and corn bread on New Year's Eve. I also always fix lasagna for Christmas Eve dinner.
My cooking triumphs
Learning to make the perfect cheesecake! Also, recently perfecting my coconut cake recipe :)
My cooking tragedies
Don't really have tragedies. There is ALWAYS a way to salvage what you have. Recently I was whipping cream for a cake topping. I got distracted and the cream curdled into butter! What did I do?? I drained as much liquid as I could, added another stick of butter and made butter cream! I got rave reviews :)

Butternut Vegetable Soup
Great flavor, great ingredients, simple directions! This was a great recipe. I did tweak so I couldn't give it 5 stars as it stands, but I didn't change much so 4 stars it is. I blanched the potatoes (idaho) ahead of time and softened the squash by microwaving it under plastic wrap for about 10 minutes to make it easy to peel and chop. I used a can of drained, chopped greens instead of kale just because that is what I had on hand. Everything else was pretty much the same and my whole family loved it...even my very picky youngest son! Great winter meal!!

Easy Chicken Curry
I hate to give a 3 star review because I ended up with a fabulous dish, BUT I did change alot so it's only fair to give the original recipe a so-so rating. As it is written, it is a good base recipe. After I read the reviews, I added 2 cups of chicken broth and 4 cloves of crushed garlic (what can I say, we like garlic!). I also added about a tsp each of kosher salt, tumeric and cumin and 1/2 tsp of paprika. Toward the end of the 30 min covered simmer I was concerned that there wouldn't be enough for my family of 5, even with rice, so I took some reviewer's advice and added a can of evaporated milk and then let it simmer the last 15 min uncovered. This is the first time cooking curry and I was very pleased with my final product. Like I said, it is a very good base. If it doesn't bother you to tweak as you go along, you will like this recipe. If you are the kind that thinks recipes should be written in stone, then you probably won't like it as written.

Best Strawberry Daiquiri
This is a great little daiquiri recipe! I made 2 pitchers, one for the kids and one for the grown ups :) Didn't have to change anything so...bonus!
