Steamed Lobster Tails

These were great. I did one minute per ounce of lobster and they were delicious. I did cut the shell and lay the meat on top. One tail ended up sideways and curled up, so be sure to position them correctly. I used a bit of butter melted and poured on the tails and a clove of garlic in the water. Delicious! Thank you!!

Potato Arugula Salad

Wow... this was so good. I made enough for two, so I just quartered a handful of small red potatoes, cooked them in water for 5 minutes in the microwave and scaled down the dressing (I used half rice wine vinegar and half red wine vinegar and added a small splash of lemon juice). I also put in a handful of shaved Parmesan for saltiness. It was very good. For the serving size that I did, my guess is that I used a T of the dressing, so it's light compared to a mayo-based dressing.

Dry Buttermilk Ranch Mix

I add 1/8 o f a teaspoon of balsamic vinegar (I use red and it doesn't change the color) to add a tang to each batch. My batch is 1 Tbls of mix to 1/3 C of light mayo and 1/3 cup of 1% milk. I've also done 1/2 fat-free Greek yogurt and half mayo.

Homemade Flour Tortillas

Like others, I didn't have lard on hand. I subbed 1.5 T of butter in half the recipe. I used these as a soft taco shell for taco beef, cheese, lettuce and onion and it was really good. It made 8 decent-sized shells. Perfectly for a family of four that includes two kids (5 and 4). I was using leftovers, but this would have been great for fajitas! Throw them in the oven with a damp cloth covering them and make the fajita filling in the hot pan you just used to cook the tortillas.

Ultra Creamy Mashed Potatoes

So good. I can never get a good creamy taste with 1% milk and the cream cheese helped. Even one my kids, who hate mashed potatoes, ate it!

Chicken Chimi in the Oven

These were super good for a baked chimi. They were crisp and I served them with shredded lettuce and guacamole. I did not use beans as I am not nuts about them. The chicken was really tasty!

Naan

Very good! I halved this for my family of four.... otherwise we would eat until it's gone. Also, this is very easy, though if you are making these with dinner, be sure that you have a helper or that the rest of the food is in the cooking stage, because making naan does require you to stand at the stove and roll, grill, butter and repeat. So good though!

New England Clam Chowder II

I changed/subbed a few things based on what I had on hand. Skipped bacon, used 2 medium redskin potatoes, 1% milk rather than half and half and only had about 1/4 of an onion. I also only had one can of chopped clams. I par-cooked the potatoes in the microwave and sauteed the onion and potatoes and celery flakes in 2 T of light butter. This was so very good and took 25 minutes.

Best Brownies

I followed the recipe for the brownies, except that I subbed 1/2 cup of Domino Light Sugar (stevia and cane sugar mix) for a full cup of sugar. They were delicious. I like a chewy brownie and these were the perfect texture and weight for my taste... even with the light sugar. I also didn't make the icing because it was for a group of preschoolers. I ate one20 minutes out of the oven topped with ice cream. So good!

Rhubarb Cobbler

This is delicious! I've made it several times and it is so easy to make. In addition to following the recipe, I've added apples and strawberries to the mix. I even made it using just a 1/4 cup of sugar on the fruit and it was still very good. This is heaven when warm and served with ice cream!

Authentic Cincinnati Chili

Awesome! So flavorful... I used regular allspice as I had no allspice berries and browned the beef and slow cooked it for about 7 hours. To get the fine texture I used an immersion blender, which worked great. I served it over spaghetti with a mound of finely grated cheddar and oyster crackers. This is a great recipe to freeze for future meals.

Baked Potato Soup

Best potato soup I ever had... and we were out of bacon and hot sauce! I used about 1/4 of a shallot instead of an onion because it needed to be used and used light cream rather than half and half, again because it's what I had on hand. I can't wait to try it with bacon. I like the way the baked potato texture lends itself to the creaminess; plus, it's easier to prepare. Thanks, Kristi!
