About this Cook
I'm a professional writer, mom and wife. I like to cook, follow a recipe well, improvise nicely, but can't make a moist chicken breast to save my life. I love Allrecipes and can be found plugging in my pantry items in the "Ingredients" finder at 4:15 almost every day in an effort to make a decent meal.
My favorite things to cook
I love making soups and any pasta or seafood dish ranks high on my list. I love grating and julienning raw veggies and mixing them with cold whole grain thin spaghetti and a shot of toasted sesame oil, sea salt and edamame. So good and so easy.
My cooking tragedies
Acorn squash raviolis made in won-ton wrappers. A sticky, gooey, inedible mess. RIP raviolis!

Steamed Lobster Tails
These were great. I did one minute per ounce of lobster and they were delicious. I did cut the shell and lay the meat on top. One tail ended up sideways and curled up, so be sure to position them correctly. I used a bit of butter melted and poured on the tails and a clove of garlic in the water. Delicious! Thank you!!

Potato Arugula Salad
Wow... this was so good. I made enough for two, so I just quartered a handful of small red potatoes, cooked them in water for 5 minutes in the microwave and scaled down the dressing (I used half rice wine vinegar and half red wine vinegar and added a small splash of lemon juice). I also put in a handful of shaved Parmesan for saltiness. It was very good. For the serving size that I did, my guess is that I used a T of the dressing, so it's light compared to a mayo-based dressing.

Dry Buttermilk Ranch Mix
I add 1/8 o f a teaspoon of balsamic vinegar (I use red and it doesn't change the color) to add a tang to each batch. My batch is 1 Tbls of mix to 1/3 C of light mayo and 1/3 cup of 1% milk. I've also done 1/2 fat-free Greek yogurt and half mayo.
