Slow Cooker Chicken Taco Soup

My husband and I love this soup! It's incredibly easy to put together at the last minute or to fix in the crock pot the night before and pull out of the fridge to cook in the morning. It's also versatile forgiving if you don't have something. Definitely use the taco season recipe provided in the first review. Also, the flavors get better as it sits in the fridge for a couple of days, so leftovers are amazing!

Butternut and Acorn Squash Soup

My husband and I absolutely loved this. I modified it slightly, but based it on this recipe...used just the butternut squash as I didn't have acorn, cut the sugar to 1/4 cup and used about 1/3 of a block of cream cheese, about 1 3/4 cups of broth, a splash of heavy cream, didn't measure any of the spices, but used cinnamon, nutmeg, black pepper, and cayenne. Pureed the squash, broth, and onion in the blender, added everything else to the pot and let it all simmer for close to an hour. The result was thick, smooth, rich, filling and amazing!

Amazingly Good Eggnog

Truly "amazingly good eggnog." We used spiced rum and even cut it back a little and it was still amazing.

Morning Glory Muffins

These are delicious and filling for breakfast or a mid-morning snack at work. I usually substitute another 1/4 cupt of applesauce for half the oil, use craisins instead of raisins and add a couple of tablespoons of flax seed meal to get some healthy oils in. I make these on Sunday and we eat them during the week. They also freeze and reheat well.
