Baked Oatmeal II

I really didn't know what to expect, but this is good! My husband likes it too, and he's not so much of an oatmeal guy. I made it just as the recipe said, no alterations. It's sweet but not too sweet and the dried cranberries are soooo good.

It's Chili by George!!

I really liked it, my husband liked it though he doesn't like beans in his chili. The kids, on the other hand, were mixed in their reviews but what do they know? ;) I will make this again.

Cheesecake Bars

The kids made this recipe. It was amazingly good, the taste and texture were very much like a regular cheesecake without all the work and tricky baking/timing issues. We will make this again!

Pumpkin Cake III

This was a big hit! Our friend who doesn't like cake ate 3 big pieces!!! The only change I made was I used 2 tsp of pumpkin pie spice instead of cinnamon. Frosted with Cream Cheese Frosting II as suggested by others. A wonderful combination, will make it again.

Basic Cream Cheese Frosting

Made this to frost Pumpkin Cake III. It was so good! I cut the amount of powdered sugar in half and it perfectly complimented the sweet cake, and we all decided it would be fabulous on cinnamon rolls, too. Thanks for sharing it!

Pumpkin Waffles with Apple Cider Syrup

These are really, really good. A great way to sneak nutrition into waffles. The syrup was kind of hit-and-miss here but everyone liked the waffles. I liked them even better this morning when I reheated them in the toaster.

Simple Whole Wheat Bread

My family ususally doesn't like anything but white bread. This has changed their minds! I used hard white winter wheat whole wheat flour, and I always add about 1/3 cup of instant potato flakes to my bread recipes, it keeps the bread from drying out. Thank you so much for the recipe!

Magic Cookie Bars II

I've made other versions of this recipe, where you pour the sweetened condensed milk over the graham cracker crust and then put everything else on top. This is much, much better! Pouring the milk on top helps keep everything together, no crumbly mess. I added a sprinkling of coconut on top and it browned beautifully, got rave reviews at the gathering I took it to.

Butternut Squash Soup

This was a huge surprize. My husband and most of my kids don't like squash so when they heard what was for dinner I got a lot of flack. They all loved it! It was so amazing! Now another wonderful way to use up my bumper crop of butternut squash that they will all eat!

Too Much Chocolate Cake

Oh yum. Dense, dark and moist. Used mini chocolate chips and it was good, can't wait to try peanut butter chips. It did take quite a bit longer to cook (15 min) in my oven which is usually on the fast side, especially with baking. A big hit, will make again.

Amish White Bread

I made 2 changes: First I cut the amount of sugar in half, secondly I added about 1/2 cup of instant potato flakes. I find adding potato flakes keeps the bread fresher longer. It was excellent.

Christmas Breakfast Sausage Casserole

Very simple and good. I ran out of bread so I used 6 hamburger buns toasted under the broiler and cut up into cubes, it's a great way to use up any bread that is going stale.

Spanish Rice II

I doubled the recipe and used salsa instead of the canned tomato/chili because that's what I had on hand. It was good, maybe a bit bland, but then again you don't want a side dish to compete with the main dish. I will make this again.

Italian Spaghetti Sauce with Meatballs

It was great! I was a bit skeptical about putting the meatballs into the sauce without cooking them first but tried it anyway. The meatballs came out moist but held together very well and I think by putting them in raw they flavor the sauce as they cook. My youngest said it was the best thing she'd ever eaten!
