If I could grasp the quality and quantity of time in the rest of my day as I was able to do with this recipe, I'd be superwoman! I was surprised how delicious and easy this was. My 13 year old girl and husband went back or 2nds AND 3rd's. I even got 2 "This is really good!" remarks from my husband who enjoys but rarely remarks on my cooking. I pretty much followed the recipe but normally add a little to suit my family's taste. My husband is Cajun so flavor and spice is a must. I did add some grilled corn which I seasoned with butter, cayenne, cumin, pepper, and cilantro. (Which by the way was delicious by itself) and threw in on the chicken when I added the cheese. After reading the reviews, I will try it in the slow cooker next time. I took the advise on one reviewer and let the chicken rest and absorb the liquid by removing it from the pan when it was done cooking and covering it with foil for 10 minutes. It was incredibly tender for oven baked chicken. Thank you for this recipe! It will definitely be a regular for our house!!
