Light Coconut Pie

I used chocolate pudding and the light cream cheese. Poured it into a store bought chocolate graham cracker crust. It had to set overnight to get firm enough to eat.

Oven-Fried Pork Chops

Fabulous with a few tweaks. I used Rice Chex to make this recipe Gluten Free. Also added onion powder and season all to the dry mixture and double dipped the chops. As others suggested, I sprayed them with Pam before putting in the oven and when I flipped them. So juicy! The timing was perfect!

Molasses Sugar Cookies

I used butter and subbed brown rice flour for wheat flour for a fabulous gluten free cookie! They were very moist when stored (tightly covered) with a piece of bread.

Banana Oat Muffins

I made this muffin gluten free by substituting half soy and half Quinoa flour for the regular flour. Also used half olive oil/half butter. I substituted Sugar Twin for the sugar....but only used about 1/2 cup. With all those health substitutions, they were amazingly good!

Honey Corn Bread

Thought it was very moist and yummy! To make it gluten free and sugar free (and a tad healthier) I substituted rice flour for wheat flour and Sugar Twin for the sugar. I also subbed olive oil for the melted butter. I cooked it in silicone cookware - it only took about 20 minutes @ 425.

Banana Crumb Muffins

I can't eat wheat - so substituted rice flour. Also substituted applesauce for butter and sugar twin for the sugar to make them a bit healthier. They were pretty good considering all the healthy substitutions! Think I'll do as others suggest next time and add vanilla and walnuts to the batter.

Lower Fat Banana Bread II

I made this into a gluten-free version by substituting whole grain brown rice flour. I was out of sugar so I substituted 1/2 Sugar Twin and 1/2 brown sugar. I didn't have regular applesauce so I used a single serving of Mott's No Sugar Added Wild Berry sauce. I added cinnamon as others suggested as well as three bananas. It's a great gluten-free treat! Turned out great - but needs even more cinnamon next time!

Sex in a Pan II

Because I cannot eat gluten (flour), I substituted rice flour in the crust layer....it had to cook about 20 minutes but tasted fine. I used sugar free pudding and cool whip to cut calories. I also substituted Heath Bar for the nuts.

Golden Sweet Cornbread

I cannot eat wheat b/c of a gluten intolerance I used this recipe and replaced the flour for brown rice flour....came out perfect! Great for those who are gluten intolerant with a simple substitution!

Perfect Cashew and Peanut Butter Gluten-free Cookies

I substituted Soy Flour for Corn flour and extra peanut butter since I didn't have cashew butter. I also added Nestle's new Swirled chocolate chips and they were fantastic! I didn't have time to roll them into balls so I just dropped them by teaspoon fulls and they came out great. I'll definately make these again and try even more variations!
