Eggplant Parmesan I

Excellent! I dippled the eggplant in an egg wash first and then into bread crumbs and fried them in olive oil. Made them stay nice and crunchy before going into oven.

I added 1/2 cup more of flour, and grand marnier instead of orange flavor. I also toasted my almonds and added 1/4 tsp of pumpkin pie spice instead of cloves. Brushed the top with milk before putting in oven.

Microwave Oven Peanut Brittle

Cook sugar and syrup for 6 mins in microwave and then add peanuts, butter, salt and vanilla and cook for 2-2.5 minutes more. Warm pan in oven before spreading and spray Pam on pan so it's easier to spread.

Chef John's Lemon Bars

Thanks Chef John! I was so worried about these coming out of the pan in one piece but after the first piece (i.e. "martyr" piece), they all came out beautifully and are delicious! I did have to reduce the time baking by 3-4 minutes for both the crust and filling but absolute lemony goodness. It will definitely be a hit at my niece's bridal shower.

Chocolate Turtles® Cheesecake I

Add 6 tbsp of margarine with the wafer crumbs. Bake crust at 350 for 10 mins and cool completely before caramel layer. Keep 1/3 of caramels to drizzle on top at the end with 1/4 of chopped pecans (toasted). Bake at 400 for 10 mins, reduce to 250 and bake for 30 mins more and turn off oven. Leave in oven 60 mins more (don't open oven door!)

Slow-Cooker Chicken Tortilla Soup

Excellent. I added an extra 2 tsp of cumin and a bit more chili powder. I also added 1 tbsp of canned chilis. Instead of water and chicken broth, I just added one tetra pack of chicken broth.

They are good but don't dip in chocolate, they are better left plain. Can make rounds instead of the crescent shape as it looks better.
