The Best Bean and Ham Soup

Really, really good! I followed the recipe pretty closely. Did not add the can of diced tomatoes for fear it would be too tomatoey. I simmered the beans alone for a half hour before adding the veggies and dry spices. I avoided adding anything that would have salt in it because I was worried about the beans not cooking. Did not add vegetable broth because I figured the veggies would make their own broth. After about 4 hours, the beans were nice and soft, so I added everything else. My ham had a glaze so I added that liquid as well. Loved the tang that comes from the chili powder and lemon juice. Healthy comfort food!

Boudreaux's Zydeco Stomp Gumbo

Num, num! This recipe was the first time I have ever tried gumbo or Cajun food. I made it twice because a friend of mine who lived in Louisiana for a while asked me to make her some more :) The main change I made the second time was less oil in the roux - I cut it to 1/2 cup. The flavor was as good or better and I didn't have to skim a ton of oil off the top. I had to use dried red chiles, but it still tasted great!

White Chocolate Raspberry Cheesecake

The white chocolate chips added such a unique flavor and texture I never would have expected. This recipe was not as difficult as it sounds either. Yum!

Rosemary Roasted Turkey

Wonderful flavor! The only thing I would recommend for making it better would be brining the turkey overnight. I also added a cup of white wine to the pan instead of the water. In looking at the recipe again, I realize I forgot to add the fresh basil, but we didn't miss it. I really love the rosemary flavor - so perfect for turkey! I cooked the turkey with breast downwards and it stayed nice and moist. Doesn't look as pretty, but taste is what matters.

Cheesy Ham and Hash Brown Casserole

This was simple to make and tasted very rich. I didn't add nearly all of the sour cream, just a few big spoonfuls, or all of the cheese. I also added chopped onions and pepper for more flavor. Very good!

Focaccia Bread

Amazing! I tripled the batch - the first one just came out of the oven. I left out the garlic powder as one reviewer suggested and put minced garlic on top instead. The bread is perfect - crispy on the outside and light and chewy inside.

Italian Wheat Herb Bread I

I have been baking bread for a long time - this is a FANTASTIC recipe. The amount of salt concerned me, as well as the amount of spices, but the bread rose beautifully and baked up nice and soft. The only change I made was to substitute in one cup of wheat flour. Kneaded the dough in a KitchenAid mixer and shaped it as round loaves on a cookie sheet. Only thing that would be better about this bread would be if the crust was thick and crunchy, but I think there's a secret to that I haven't figured out yet. Great recipe!
