Old Fashioned Apple Dumplings

This is one of the best dessert recipes I have ever made. Very easy, very delicious--and unbelievable when served with a scoop of vanilla ice cream! Like others, I made each dumpling with half an apple, instead of a whole--the whole is too big for one serving. I also saved the left-over incredible syrup to use for ice-cream topping. A real treat!

Crispy Fish Fillets

This is absolutely wonderful--the taste is so delicious. Follow the directions to the word--don't add or change anything. Best-ever fried fish, and so very easy!

Cheesy Ranch Potato Bake

I boiled the cubed potatoes until semi-soft, drained well, then put them in the casserole dish, added all the other ingredients, mixed, and baked for 30 minutes. Easier, and soooo yummy! The ranch dressing made this fantastic.

Peanut Butter Haystacks

Salmon Cakes II

Good recipe for salmon cakes--it would be much better still with the expensive red salmon instead of the pink! Also, I could not get the cakes to hold together--mine were in pieces, but still tasty.

Hamburger Steak with Onions and Gravy

Good dish--filling and satisfying. I used gravy mix as well as the flour--and it was still a little under-flavored. I added onion powder, garlic powder, and Kitchen Bouquet to the gravy.

Cheeseburger Soup I

This soup is heavenly. I have made several changes, it makes it so much easier--I just melt some butter and sautee' the hamburger, MINCED onions (if my teenagers see an onion, they revolt), carrots, and celery in a pan, bring the broth to a boil in a big pot (I use more than is called for) and throw in FROZEN FRENCH FRIES to boil for a few minutes--they cook quickly, they are delicious, it is so much less work, AND when I called this soup "cheeseburger and french fries soup", all the teenagers gobbled it up, and they loved it--they would not have tried it otherwise. When the french fries have boiled for a few minutes, I throw in the sauteed meat and veggies and let them all bubble together for a few minutes more. I warm two cups (or more) of half and half, and shake it up with 1/2 cup or so of flour--add it to the bubbling brew, and it thickens instantly. (Add a little cornstarch in water if it is not thick enough). Then I add the cheese and the sour cream. Everyone at my house shouts for joy when they smell this cooking...and I never have leftovers to pack for my lunch!

Adam's Apple Cake

Adam, you are my new hero! What a fine young man you are. I am honored to bake your wonderful apple cake--it is VERY moist, and delicious. Cut it whil warm, and serve it with a scoop of good vanilla ice cream on top. You'll think you've gone to heaven! Best apple cake resipe I have ever tried.
