Sauced Fish

I found a great way to improve this recipe. I rubbed my fish on both sides with the seasoning called "Dianne's Fish Seasoning" also on this website. Then I put a healthy spoonful of this sauce on top (I used no butter and much less lemon). Baked until flaky and it was fabulous! Had a lovely herbal flavor with just the right amount of zip from the sauce.

Dianne's Fish Seasoning

I love to cook with herbs-so good for you. I made this with just a pinch of rosemary (I find the flavor too strong), half the salt, and a few pinches of dill. THEN, I added the sauce from the "Sauced Fish" recipe on this website (just use less lemon.) Baked till flaky and it was delicious! Had a nice herb flavor with just the right amount of zip from the sauce. Try it!

Lemony Poppy Seed Muffins

Awesome lemon flavor!! I only had one lg lemon which I juiced and got 1/3c lemon juice. I grated the rind into the wet ingredients-maybe a tsp or so. I added bottled lemon juice to make 1/2 c total (I had read that the avg lemon has about 1/4c juice) I think fresh lemon made all the difference. Next time I will use 2 fresh lemons. I ended up with a ton of batter so I made 18 muffins, which turned out somewhat small so next time I'll make 12. The taste of these is amazing- moist and lemony!! I'll never use a mix again!!

Baron's Blackberry Cobbler

If you are thinking of making this with FROZEN blackberries...DON'T. I did and it was a soggy mess! I guess it tasted OK but hard to tell what it was suppose to be like.

Indian Fish Curry

Was looking for something different for dinner. We never eat Indian food so this certainly qualified. My family all liked it- and I have picky teenagers. Not the most attractive dish. But... its delicious and I will be making it again!

Empire State Muffins

These are yummy! I've been looking for a good carrot muffin recipe. These are not as heavy as others I've tried and they're just the right sweetness. I followed the recipe except 1)Part of the apples was crushed pineapple left over from a different recipe 2)I used 1/2 whole wheat flour 3)I used raisins and craisins in place of fresh cranberries. My 15 yr old son loved them! So much healthier than pop tarts or store bought cookies!!

Broccoli Fish Bake

I used haddock, lightly steamed fresh broccoli, and Healthy Requests Cream of Celery soup (less sodium.) I put some sour cream in as others suggested. For the topping, I put one slice of bread and a handful of Cheese Nips in my mini food processor and mixed the crumbs with butter. It came out awesome!! I'm trying to feed my family more fish so I'm sure we'll have this again. Thanks for the idea! I love allrecipes!

Haddock Au Gratin

Loved this! I used 2% milk in place of the cream and half n half with no problem. I sprinkled cracker crumbs on top for a little crunch. Delicious!

Armenian Lentils

Definitely not pretty to look at but I enjoyed it. I served it with chicken breast and spinach. I put plain non-fat yogurt over it and that added flavor. My husband's opinion was neutral and my teenage son turned up his nose (as he does with anything new.) Did take a little longer to cook than stated.

Honeybee Cookies

I was hoping for a simple but good cookie, like a shortbread cookie. I made these without alterations and they were BLAH. The first ones came out tasting undercooked and doughy so I left the next batch in longer but then they were slightly burned on the bottom. My husband said he liked them and they all got eaten but I won't be making these again.
