Sauced Fish
I found a great way to improve this recipe. I rubbed my fish on both sides with the seasoning called "Dianne's Fish Seasoning" also on this website. Then I put a healthy spoonful of this sauce on top (I used no butter and much less lemon). Baked until flaky and it was fabulous! Had a lovely herbal flavor with just the right amount of zip from the sauce.

Dianne's Fish Seasoning
I love to cook with herbs-so good for you. I made this with just a pinch of rosemary (I find the flavor too strong), half the salt, and a few pinches of dill. THEN, I added the sauce from the "Sauced Fish" recipe on this website (just use less lemon.) Baked till flaky and it was delicious! Had a nice herb flavor with just the right amount of zip from the sauce. Try it!

Lemony Poppy Seed Muffins
Awesome lemon flavor!! I only had one lg lemon which I juiced and got 1/3c lemon juice. I grated the rind into the wet ingredients-maybe a tsp or so. I added bottled lemon juice to make 1/2 c total (I had read that the avg lemon has about 1/4c juice) I think fresh lemon made all the difference. Next time I will use 2 fresh lemons. I ended up with a ton of batter so I made 18 muffins, which turned out somewhat small so next time I'll make 12. The taste of these is amazing- moist and lemony!! I'll never use a mix again!!
