Baked Zucchini Chips

Reviewed: Jul. 12, 2012
These were simple enough and tasty. I took one reviewers suggestion and sliced them a bit thinner (about 1/8 inch) and they turned out crisp. I also used panko bread crumbs as I like their crunch better.

Easy Garden Green Beans

Reviewed: Jul. 25, 2011
This is very good and simple. I used shallots instead of garlic and red wine vinegar instead of white. Thanks for the recipe.

Zesty Slow Cooker Chicken Barbecue

Reviewed: May 17, 2011
Made this recipe as is for a party and it turned out awesome! This can easily be mistaken for pulled pork when shredded.

Best Spanish Rice

Reviewed: Aug. 13, 2010
This was really good. I used chipotle salsa and diced up two chipotles to go into it, otherwise I stuck to the recipe. Very easy and delicious.

Tequila Cocktail Sauce

Reviewed: Aug. 13, 2010
This stuff is legit. I adjusted the servings to 2 and it was perfect. I tried it following the recipe exactly and it was great, then added some chipotle powder to go along with the chipotle shrimp I made. Also great.

Seven Layer Tex Mex Dip

Reviewed: Jul. 25, 2011
This was an interesting take on seven layer dip. I was a little skeptical of the mayo/sour cream mix, but it adds a bit of a spicy kick to an otherwise boring seven layer dip. I took it to a pot luck and it got gobbled up pretty quickly.

Easy Risotto-Style Rice

Reviewed: Sep. 3, 2011
This was simple and easy (as easy as risotto can be). I made it as directed and it was awesome. You could easily add mushrooms or any veggie to this to make customize it, or use something other than chicken broth.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Feb. 15, 2012
I made this pretty much exactly as the recipe states, using a rotisserie chicken from the supermarket and it turned out really good. I did not make my own tortilla chips, just used store bought and crumbled them into the bowl. This is a really good recipe.

Beer Margaritas

Reviewed: May 10, 2010
These are good but really sweet. I used Coors Original and ended up adding about 6 ounces of water to thin them out.

The Whole Jar of Peanut Butter Cookies

Reviewed: Dec. 11, 2009
Good cookies, be sure to leave them just undercooked when you pull them out of the oven or they will be a little too crumbly.

The Best Red Enchilada Sauce

Reviewed: Nov. 9, 2009
I followed the directions exactly and this turned out really good. I would recommend adding crushed red pepper before blending to add some heat to this as its very mild.

Butter Chickpea Curry

Reviewed: Oct. 19, 2009
This is a really good recipe, very similar to what you might get at an Indian food restaurant. To make it a vegan dish I substituted plain soy yogurt for the milk and about 1/4 cup of water as the yogurt made it a little too thick to stir well.

California Grilled Veggie Sandwich

Reviewed: Sep. 21, 2009
This sandwich is great for dinner or lunch. I add sliced avocados to this and use ciabatta instead of focaccia. They are easier to eat if you make them open faced, plus you can stack more veggies on it that way.

This is great, I use it for any cajun dish and even sprinkle it on french fries, pasta, steaks, shrimp, chicken, fish, etc...

Mushrooms with a Soy Sauce Glaze

Reviewed: Jul. 12, 2012
This is really easy and turns out perfect every time. It is also easy to expand to match with whatever you are serving as a main dish (e.g. I added rosemary in one instance, thyme in another, and cajun seasoning in yet another.)

Chef John's Stuffed Summer Squash

Reviewed: Jul. 20, 2012
I could not find merguez and didn't have time to make my own so I used hot italian sausage instead and this turned out incredible. I used zucchini from the garden because, well zucchini plants are ridiculously prodigious. I used 3 ounces of goat cheese because 2 was not enough and used panko on the top.

Day After Thanksgiving Turkey Pho

Reviewed: Dec. 1, 2011
This was awesome! The only think I changed was to add about 2 cups more of water to cover the bird completely, otherwise I left everything else the same and it turned out perfectly.

Mrs. Sigg's Snickerdoodles

Reviewed: Jul. 12, 2012
I made these for a pot-luck and they were gone within minutes. Make sure you do not overcook them, take them out when they are still a bit mushy or they will be overcooked and hard when they cool.

Butternut Squash Risotto

Reviewed: Jul. 12, 2012
This is an awesome way to use garden produce, I really love risotto and the sweetness of the squash added a lot of depth to a regular old risotto.
