The Best Red Enchilada Sauce

I followed the directions exactly and this turned out really good. I would recommend adding crushed red pepper before blending to add some heat to this as its very mild.

Tangy Vegan Crockpot Corn Chowder

The only reason I rate this with three stars is because my wife seemed to like it. I'm not sure what it was about this, weather it was the texture or the flavor but I did not enjoy this recipe, sorry.

Tequila Cocktail Sauce

This stuff is legit. I adjusted the servings to 2 and it was perfect. I tried it following the recipe exactly and it was great, then added some chipotle powder to go along with the chipotle shrimp I made. Also great.

Vegetarian Cassoulet

This dish is good, and easy. I can't find "savory" around so I just use a leaf or two of sage in this. I usually have to add a healthy pinch of salt to this but otherwise I really like it.

Day After Thanksgiving Turkey Pho

This was awesome! The only think I changed was to add about 2 cups more of water to cover the bird completely, otherwise I left everything else the same and it turned out perfectly.

Easy Risotto-Style Rice

This was simple and easy (as easy as risotto can be). I made it as directed and it was awesome. You could easily add mushrooms or any veggie to this to make customize it, or use something other than chicken broth.

Seven Layer Tex Mex Dip

This was an interesting take on seven layer dip. I was a little skeptical of the mayo/sour cream mix, but it adds a bit of a spicy kick to an otherwise boring seven layer dip. I took it to a pot luck and it got gobbled up pretty quickly.

Grilled Tequila-Lime Shrimp

The marinade was not enough for a pound of shrimp. I doubled it and even then it was almost not enough. Marinated for one hour because others had suggested it but it was not enough time as the shrimp did not take on any flavor. I would maybe try this again but would marinate for at least 3 hours.

Smoked Salmon Pizette

This recipe was pretty good. Kind of a different take on the lox bagel. I served these as mini-bagels. The spread was kind of runny at first but firmed up in the fridge overnight. Next time I will toast the bagels separately instead of baking them with the spread on, I was not fond of that.

Fluffy Pancakes

These were really good pancakes. I added 1 tsp of cinnamon and 1 tsp of vanilla extract to the batter. I did have to add about 3 tbsp of milk to the batter because it was far too thick but otherwise these were perfect.

Gnocchi with Cherry Tomato Sauce

This was ok, I would maybe add a little canned tomato sauce or something to make more of a sauce. Also the cherry tomato skins were a bit too tough, I think I would use skinned tomatoes for this since the crushed tomatoes have skins too.

Chef John's Stuffed Summer Squash

I could not find merguez and didn't have time to make my own so I used hot italian sausage instead and this turned out incredible. I used zucchini from the garden because, well zucchini plants are ridiculously prodigious. I used 3 ounces of goat cheese because 2 was not enough and used panko on the top.

Baked Zucchini Chips

These were simple enough and tasty. I took one reviewers suggestion and sliced them a bit thinner (about 1/8 inch) and they turned out crisp. I also used panko bread crumbs as I like their crunch better.

Slow-Cooker Chicken Tortilla Soup

I made this pretty much exactly as the recipe states, using a rotisserie chicken from the supermarket and it turned out really good. I did not make my own tortilla chips, just used store bought and crumbled them into the bowl. This is a really good recipe.

Curried Coconut Chicken

This was really good, the only thing I did differently was used tofu instead of chicken. Definitely marinate the tofu and cook it separately, otherwise it's a little to "tofo-ish".
