Oven Baked BBQ Ribs

These were pretty good. I didn't bother basting the ribs as the sauce was deep enough in my pan to half cover the ribs at all times. I just flipped them every 45 minutes or so. They turned out fall off the bone tender and flavourful. Will make again.

Ham with Pineapple

Decent glaze. Added some nice flavor, and stuck to the ham well. Didn't use cloves or cherries and it still turned out good.

Sugar Cookie Frosting

Pretty good frosting. Sweet, but not to sweet. Dries fairly quickly so cookies can be stacked, but doesn't get hard. My only issue was with the taste, it seemed a bit off. Maybe next time I'll try substituting half of the shortening for butter. Made half of the frosting chocolate by adding in some cocoa powder and it tasted great.

Sour Cream Cut-Outs

Definitely an easy dough to put together and work with, but these cookies are tasteless. They next day these cookies were still "soft", but tough. If you are looking for a vehicle for tons of icing- make these; if your looking for something that tastes good, look elsewhere.

Irish Chicken and Dumplings

Excellent on a cold day. I cut up a whole chicken (approx 2.5 pounds) and simmered the pieces for about an hour before shredding. I also used 3 cups of chicken broth rather then water to up the chicken flavor, doubled the pepper and seasoning, and totally cut out the salt (the broth and seasoning had enough). I also used my own dumpling recipe rather then baking mix.

Great. Very filling. Did find them to be a bit bland. Next time I'll increase the amount of cinnamon and nutmeg and maybe try adding some chopped apples.

Freestyle Fruit Tart

Great quick dessert. Very versatile. I used half regular cream cheese and half strawberry, and topped it with blueberries and strawberries rather then plums. Will definitely continue to use this recipe and try with other fruits.

Tortellini Minestrone

This is a really great basic soup recipe. I made as directed, except I skipped the sausage and added a can of mixed beans and also some chopped mushrooms towards the end of cooking. I did find that the ketchup was a little overpowering and made the broth a bit tangier then I would have liked. Next time I will take the advise of others and try a can of tomato sauce instead.

Zucchini Brownies

The brownies themselves aren't bad, but aren't great either. They have a different texture- almost spongy, and aren't quite sweet enough the stand on their own. I was going to skip the frosting, but after tasting the cooled brownies I decided to make add it. Big mistake- The frosting is VERY sweet and slightly bitter from all of the cocoa. It's also pretty runny (I started to add more sugar to thicken it up but the frosting was already overly sweet). My advise? Skip this frosting recipe and find a better one, but if you must use this one- cut back on the cocoa powder.

Green Chili Chicken Burgers

Pretty good burgers... a little on the spicy side. I used ground turkey rather then chicken, and added 1.5 tsp cumin. Also added some diced tomato to the guacamole. I'll be making these again.

Zucchini Yogurt Multigrain Muffins

These are super! Made them exactly as the recipe called for except i cut the sugar down to 1/2c and used plain oatmeal rather then oat flour. Super moist and delicious. Who would guess they're healthy?

Chicken Souvlaki Gyro Style

The chicken marinade is awesome! Leftover chicken is great the next day just by itself or in a sandwich. Tzatziki sauce is pretty good to but it makes a lot. Next time I'll half the recipe for 4 servings. I didn't have rice vinegar, so I substituted it for a mix of 3 parts white vinegar and 1 part water. Cant even notice a difference.

Cheesy Ranch Potato Bake

Awesome. I mashed the potatoes leaving some big chunks and skipped the butter on top. I also didn't use all of the cheese or dressing called for in the recipe- just added them to taste. I used more like 1/2 a bottle of ranch.

Absolutely Fabulous Greek/House Dressing

Delicious. Easily scaled down- 6 servings made enough for a big greek salad with some dressing to spare. I definitely recommend using quality olive oil and vinegar in this one, it makes all the difference in the taste.
