Lemon Bread

My preliminary review (as I have only just removed the bread from the oven and glazed it) is that this bread will be delicious. However, I would caution anyone just trying this recipe to remove the bread right away from the pan (as the instructions dictate) as this is a recipe for a broken loaf. Give the bread 5 minutes or so to settle in the pan and then remove it. Otherwise, I will almost definitely make this bread again.

Fluffy Biscuits

Absolutely the best biscuits I've ever made or tasted. These came together so easily and tasted so soft and mild. I had them for breakfast with the pumpkin butter (from this site) and they were FANTASTIC. Note, I didn't roll these out and cut them. I simply kneaded the dough a bit in the bowl until it was smooth and then torn off chunks and rolled into balls which I patted down on top once on the pan. They rose beautifully and looked very organice. Love, love, love these biscuits.

Best Big, Fat, Chewy Chocolate Chip Cookie

Yep, true to the description, these are the chocolate chip cookies you;ve been looking for. Awesome, chewy, chocolatey goodness. By the way, if you don't have unsalted butter, just use salted but leave out the 1/2 tsp of salt called for in the recipe. Works fine.

Favorite Banana Blueberry Quick Bread

This bread is excellent. Not too sweet and VERY MOIST - I expect it to still be moist even after a couple of days (it will probably freeze very well too). I used 4 overripe bananas and used applesauce instead of shortening as per many of the other reviews. Bread doesn't rise very much but that's okay. Try toasting this bread - absolutely excellent. Oh, and I also added about 1/2 tsp of both cinnamon and nutmeg and 1 tsp of vanilla. Think I will add a full tsp of cinnamon and nutmeg next time for an extra bit of flavor.

The Best Chocolate Cake You Ever Ate

Good cake, not great though - not a very chocolatey taste for chocolate cake. The frosting is good but 4 cups of icing sugar is WAY too much for the amount of liquid in the recipe. Try cutting the icing sugar back to 3 cups instead.

Cranberry Orange Cookies

Wow, wow, wow - that sums it up! These are probably the best cookies I have ever had/made. I added about 1/4 cup extra flour over what the recipe called for and although I thought the dough was a bit on the dry side, the cookies turned out perfectly and spread just enough. Don't know what other people are talking about when they say that their cookies spread all over the pan, mine barely expanded at all. Baked them for exactly 12 mins at 375 and they are slightly crispy on the outside and soft and chewy on the inside - perfection! I should add that I also added 1/2 tsp of almond extract and I used Oceanspray Craisins as well. I don't find the cookies too sweet at all with the glaze. As for whether the cookies flattened out during baking, mine didn't flatten at all, they actually came out like thick, fluffy cookies, which I preferred. I think part of the trick is to not let your butter get too soft before using it in the mix (certainly don't melt the butter as this will cause the cookies to flatten for sure).

Pumpkin Pie Cake

I was excited to make this as it sounded great from the reviews but unfortunately, my family didn't enjoy it at all. The combination of ingredients is good but the topping comes out too sweet - probably the combination of melted butter with the powdered cake mix - pure sugar. Also, the cake didn't rise as much as I expected which made for quite a dense, moist dessert. Moist is good, but a lighter cake would have been better.

Beth's Spicy Oatmeal Raisin Cookies

Absolutely the BEST oatmeal cookie I have ever made. The perfect blend of oatmeal and spices and the clove is not overpowering. 11 minutes cooked them to perfection (with the addtional 2 minutes on the pan out of the oven). Will definitely be holding onto this recipe. Note - I used regular shortening as I didn't have butter-flavored and the cookies are still perfect. Thanks Beth.
