Slow Cooker Pulled Pork

If I can make this, anyone can! I'm a complete kitchen novice and this was super easy!! I used 2 pounds of pork shoulder, but followed the rest of the recipe. It was a great lunch for Father's Day! My hubby was very pleased! I definitely will be making this again!

Quick and Easy Pizza Crust

So easy to make this crust! This recipe is awesome! I didn't have bread flour so I used half all-purpose flour and half wheat flour just for fun. It turned out perfectly! Definitely keeping this one!

Puerto Rican Breakfast Custard

Pumpkin Bean Soup

I made the soup as written, except for using green peppers instead of red ones. I found the need to add some extra flavor when the soup was done. I added a few shakes of chili powder and two more teaspoons of salt. I served it up with dollops of sour cream, surrounding them with a sprinkled blend of Mexican cheese, and ate it using white tortilla chips. Both my husband and I enjoyed it, was like a different kind of chili.

Oatmeal Shortbread Cookies

Good recipe and the cookies turned out great! I actually left the dough sitting in the fridge for four days. Then I took it out using the recommended surface but also made sure to take a couple handfuls of flour and mixed it into the dough. Then I rolled it out and cut from it with a cookie cutter. I'll be making these again.

Mediterranean Lemon Chicken

I'm not a big fan of chicken legs, but this was so TASTY! Even my picky son loved it! I didn't have a baking dish, so took a metal baking pan of the same size and covered with tin foil and poked some holes in it. I uncovered it completely at the 20 minute mark and followed the rest of the procedure. I used a mix of oregano and basil for my seasoning and through some chopped onions into the pan 15 minutes before it was done cooking. Fabulous flavor and drippings were great over white rice. Definitely making this again! Excellent recipe!

Flourless Peanut Butter Cookies

Super easy and quick recipe, my favorite type. Everybody loved these! My husband said they were the best peanut butter cookies ever! They came out soft, thick, and were perfect for sending out in a tin. I made two different batches, one with crunchy and one with creamy peanut butter. Both rocked! I got 18 out of 1 batch, sheeted the cookies as 2 inch wide, 1/2 inch thick paddies. I rolled them in my hand first and then flattened them a bit. I followed the recipe as given. Awesome cookie recipe!

Zucchini Parmesan

Easy is right. If I can make this, anyone can. I'm still developing my cooking skills. My husband really liked this. Impressing him is good because he's the better cook. I halved the recipe because I only had one zucchini to use. I also didn't have garlic, but instead used seasonings that had garlic and few other ingredients in them. Then I sprinkled some adobo over the zucchini before putting the spaghetti sauce over it. It still turned out and was very tasty. Great recipe Mary Jo! This one is going in my recipe box. Thank you for sharing it.
