Wild Rice Stuffing

It was okay but I agree there is no wow factor. I missed the parsley so this might be the difference. I ended up adding a sprig of rosemary and couple sage leaves a the end and let the flavors penetrate for a while to help flavor it up.

Pumpkin Soup

I didn't like this at all. I have had pumpkin soup in five star restaurants that was fabulous. This was nothing like it. sorry.

I'm surprized that the rice would cook up properly mixed into the meat prior to cooking. I haven't tried this yet but if anyone has please let me know how it goes?

Pumpkin Puree

I followed the recipe and found I needed to alter it a bit. It was a big pumpkin so I doubled the cooking time. Also I found the puree to be very smooth after I used a blender. It was a very bright yellow and to thin so I reduced it for a few hours on low, stirring frequently. the end result was a nice orange, thick pumpkin puree.

Wild Rice Casserole II

This ended up fabulous. I had to take it out of the oven and cook for at least another 20minutes on the stove to get the water to absorb but it was worth it. I used canned mushrooms and I think that is why it was watery at first. served it with chicken Marsala.
