Chicken Tikka Masala
LOVE LOVE LOVE this recipe with some adjustments.......best Chicken Tikka Masala I've ever managed to make. Reduce the Salt and Double the Sauce with a few additions....... Marinade - omitted Cayenne pepper and used less salt 2 tsp (definitely not 4 tsp - might even try just 1 tsp next time) Used 2 lbs of Chicken Breast. Covered and refrig for 4-6 hours (or overnight.) Doubled Sauce: 2 tbls butter, sauted 3-4 cloves garlic minced, NO jalapeno. Season with 3 tsp cumin, 3 tsp paprika, 1 1/2 tsp cinnamon, 1 tsp ground cloves, 3 bay leaves and NO Salt. Cook for 1-2 minutes and then add 2 X 8 ounce cans of tomato sauce and 2 cups (1 pint) of heavy cream. Absolutely delicious. Everyone loved this. Definitely going to make again......next time with some Naan!

Oven Baked Garlic and Parmesan Fries
Everyone in my family LOVED these! I didn't have dried thyme or fresh parsley on hand. Used 1/2 teaspoon of Italian Seasoning instead - delicious!

Thai Green Curry Chicken
My whole family loves this recipe including our 2 and 4 year old. Made some adjustments though as it needs veggies. Also made with bone-on Chicken thighs (did not dice) and they were delicious! Added Matchstick Carrots, Mushrooms and 1/2 bag of defrosted Frozen Broccoli. Omitted Fish Sauce as we didn't have any and it was still delicious! This is definitely going in our cooking binder.
