Aunt Millie's Broccoli Casserole

WINNER! My family raved over this at Thanksgiving dinner when there were alot of other side dishes it competed with. So it was a definite stand out! I did as other members suggested and added the half & half (used fat free) And I used a mixture of American & sharp cheddar for the best cheese flavor. But NO SALT!! You can salt if you wish, but with canned soup which has a ton of sodium and processed cheese also having a bunch I didn't feel the need for extra salt and it was fine.

Black Bean Salad

Delicious, Fresh & Easily adaptable. I used Fresh corn that I grilled then cut off the cobb. Added a red pepper which I prefer to pimento's as it's crunchier. Instead of Italian dressing I used Lime juice, Olive oil and added some more Southwest seasonings. I omitted the avocado as I felt it would be too mushy also, but I wanted to add sliced black olives - maybe next time...

Spicy Pretzels

A Huge Family Favorite. I've been making these for years, but slight differences - I use 2 bags of pretzels, 1 cup of oil, then 1 tablespoon of each of the seasonings, Garlic Powder, Lemon Pepper and Dill weed instead of Cayenne, plus the pkg of dry Ranch mix - or really adjust per your taste. But this what everyone always begs me to make.

Pecan Surprise Pie

Everyone seemed to really enjoy this pie very much. But I didn't feel the crust was done on the bottom. Next time I would partially pre-bake the crust first. Because the bottom crust wasn't well done it kind of mushed into the custardy part of the pie and I didn't find that very appetizing.

Apple-Cranberry Salad

One of my favorite salads. LOVE the dressing. I used romaine cause that's what I had on hand, and omitted the apple cause it just didn't need it. The pear was plenty.

Caramel-Pecan Pumpkin Pie

Really Tasty Everyone thought this was absolutely delicious. But my topping was very crunchy - the caramel part kind of solidified. When I made it I softened the butter and mixed in the brown sugar & nuts then spread on top. Maybe I should have melted the butter? Didn't affect the flavor - just made it harder to cut through the top that was crunchy into the bottom (that part was also delicious0.

Easy Cheesy Cream of Broccoli Soup

Great, flexible recipe. I used fresh broccoli that I steamed. And used cheddar soup instead of one of the cream ones. Then used shredded cheddar for the cheese. Had to add more milk cause it was pretty thick. But turned out Great!

Frosted Banana Bars

Excellent and easy to personalize. I followed some readers suggestions. Used a 13X9 inch pan and baked for 30 minutes. Had 4 VERY ripe bananas so I mashed 3 and diced the last, and added 1 tsp. cinnamon. I had a tub of vanilla icing that I mixed in banana extract which tastes great with the cake, and on top I sprinkled some finely ground nuts with cinnamon sugar that I happened to have on hand. All together it turned out amazing and got great reviews!

Black Bean Rice Burgers

This is a nice, easily customized recipe. I was out of brown rice so I used couscous which is light and fluffy. I also used the other readers suggestions which helped a lot. I served with a peach chutney from this site that was perfect. It made a bunch so I froze half to have on hand any time.

Pork Chops with Cranberry Balsamic Sauce

Outstanding! It's just me so I divided the recipe down and it worked perfectly for me. I didn't have chicken stock, so used beef, and just couldn't find my garlic (it was hiding in the back of the fridge) so got frustrated and used garlic powder and even that worked great. The combination of flavors is just delicious! I wanted to lick the pan!

Blueberry and Banana Cream Cheese Pie

Awesome and very versatile. The filling is one I've used in a fruit tart for years and everyone goes nuts for it. I did this in a graham cracker crust w/out the pecans. And topped the pie with fresh blackberries that are in season. My son LOVED it!

Lemon Parmesan Spaghetti

Fast & Easy! I really liked this, especially since this is a very adaptable recipe. I didn't have any fresh parsley so used dried. I also stirred toasted, chopped walnuts when it came out of the oven. The sauce was tasty & creamy without being too heavy. Next time I plan on adding some veggies or meat.

Brenda's Apple and Pomegranate Crisp

Great! Nice variation on Apple Crisp. I used all the seeds from my pomegranate so upped the brown sugar to close to a cup. And also baked it longer which really plumped the seeds up nicely. Next time I think I'd like to make more of the topping tho - it covered ok, but was a bit scant, which is why 4 stars.

Mushroom and Endive Soup

I had no problem getting the yogurt to mix into the broth smoothly, and it tasted great! I mixed it one ladle at a time. I added tarragon also, which I liked. I think this will be great as a base recipe for just about any veggies or leftovers.

Zucchini Corn Fritters

Really great. I'm so sick of all my other zucchini recipes this was a great new way to do zucchini fritters - sweeter. I added a 1/4 cup of shredded parmesean and 1/2 cup more flour since the batter seemed too thin to me. My corn was fresh from the cob but very juicy, My only complaint is they really absorbed ALOT of oil.
