Marinated Tuna Steak

Nice, although a little salty for my liking. I used the zest of the lemon, and more fresh oregano than the recipe said. Would make it again, perhaps using 1/4 cup of soy and 1/4 of wine

Chalau

Solid. I didn't have any cilantro, used half the suggested oil and used a cup of water and half a cup of milk. Ended up adding quite a bit more spice than recommended, and about 2 tbsps of lemon juice. Also threw in 4 stems of mint. Everyone liked it, and I'll be making it again.

Spicy Grilled Chicken

Definitely making this one again - so. good. Doubled up and used it on 6 slashed chicken thighs. Didn't have any chili flakes so I substituted in cayenne pepper to taste. Delicious

Coriander Salmon

Very nice. I added the zest from the lime to the juice mixture, along with some sugar as it was rather tart. I turned the fish once, taking 3 minutes per side. I threw the juice mixture on and covered the pan after the first turn. Had it over rice. Delicious

True Lancashire Hot Pot

Very pleasantly surprised by this. I added some chopped carrot and celery in with the onion. I didn't peel the potatoes which gave some nice texture, and used about twice the amount of gravy which the recipe called for. Turned a left over lamb leg into a hearty meal

Maple Salmon

Very tasty for something so simple. I followed the recipe but then when it came to putting the fish in the oven I enclosed it in foil for 15 mins, and then opened the foil for the last 5. Next time I might substitute some of the syrup for wine

Lamb Chops with Balsamic Reduction

Excellent. I managed to forget to add the butter at the end but it was still delicious served with mashed potatoes and buttered string beans. Added a few tsps of white sugar to take the edge off the acidity of the reduction

Lamb Tagine

Restaurant grade! Took less time to simmer than the recipe said (40-50 minutes), but this may have been because my hob wasn't on the lowest setting. My only criticism would be perhaps a little salty for my palate. Served it with cucumber raita and cous cous. Everyone loved it, and I'll definitely make it again!

Cucumber Raita

Used one big cucumber, seeded but not peeled. Came out very nice, but I ended up adding a fair bit more mint than the recipe suggested. Very nice flavour, went great with the lamb tagine!

Nice. A great way of using up leftover smoked salmon. I added tomato paste to the softened onions as I didn't have any fresh tomatoes. Came out lovely

Three Bean Casserole

Simple to throw together and very hearty! I didn't have the exact ingredients so I used 2 tins of baked beans and 2 of kidney beans, then added 8 rashers of smoked bacon and a bell pepper which I fried. Served it under grated mature cheddar and a good dash of Tobasco. Would make it again!

The Best Thai Coconut Soup

Brilliant! I didn't have enough coconut milk so I made up with sour cream and creamed coconut. Wasn't hot enough for me so I added some cayenne pepper at the end to finish it up. The flavour really is excellent

Traditional Mashed Potatoes

Good! The texture was perfect, but it is quite rich (probably amplified by my use of whole milk). Heated the milk together in with the butter in the microwave which worked well. Next time I might try substituting grated cheese for some of the butter.

Baked Buffalo Wings

Came out well for a first try. The oven seemed to make the Frank's lose its kick. Next time I'll try baking the chicken before dipping it in the butter mix. Definitely a keeper though!
