Best Brownies

These are dangerously addictive. I must have them all the time, lol. But seriously, a couple of things. 1) the frosting will look and feel too dry and cracked at first. Add it to the brownies immediately after they come out of the oven, and keep smushing around the frosting every once in a while for about 30 minutes. Eventually it will settle into a thick fudge like top. 2) 35 min. will not hurt them, but I found 30 min to give the brownies a far superior texture. 3) The second time I doubled the frosting-it makes the brownies SOOOO amazing. 4) when I doubled the frosting recipe, instead of doing 6 tablespoons of cocoa, since I was short on it, I used 3 tablespoons cocoa, and melted 3 tablespoons of chocolate chips with the butter. I think this made the frosting even fudgier. Anyway, this is a must try recipe. If you think, like me, that you have tried and tasted all brownie recipes, you must try this one, and be amazed. My new favorite go-to brownie. Thanks Angie!!!

Creamy Au Gratin Potatoes

I thought, when I picked out this recipe one evening, that it had to be too simple. It was too few ingredients. How could something tasty be this simple and have that few ingredients? The only thing that swayed me was the sheer number of delighted reviews. So I tried it. And it took a while, but it was easy. And the brown spotting on top looked fantastic. It was delicious. And everyone loved it. It is now a family staple-and my older brother's new favorite food. I'm sending him the recipe right now! Thanks CathyM!

Peach Pie

I liked this pie pretty well, but I had to bake mine 20 minutes more to make the peaches cooked all the way through. That could have just been the kind of peaches I was using, though-they were white and hard peaches. It was very simple and easy to make, but the flavors were simple as well-if that's what you like. I think next time I would add some warm spices like cinnamon, nutmeg and cloves and use brown sugar instead of white for the crumbly mixture inside the pie. I might also use more ripe, sweeter, yellow peaches for this.

Naan

This is the BEST naan bread ever! I used my nonstick pan with raised grill ridges, and I had some beautiful naan bread. Everyone said they tasted really good, and that they looked like something I'd bought. My brother ate three of them! Thanks, will be using this recipe again. I found I didn't need the oil-it didn't stick to the pan, and when I used oil it made the naan too heavy and greasy. Note: Shake excess flour off the naan breads before grilling-or else you'll have a lot of smoke in the kitchen!

Banana Banana Bread

This is my favorite banana bread recipe-I use it every time I want delicious moist banana bread. I substitute oil for butter because it stays moist longer that way, and I add a teaspoon of orange extract. The loaves go so fast I always make them two at a time. Doubles easily. Thanks for the terrific recipe! I also wanted to add that I find that 60-65 minutes is waaaayyy too long. I've been doing 50 minutes and I think I may try 40-45 minutes for the next batch.

Banana Bran Muffins

I made these just now-and let me tell you. These are soooo good. They are wonderfully hearty and wholesome, and a gorgeous warm brown color. I did add some orange extract along with the orange juice, and some ground cloves as well. I will definitely make these again!

Refried Beans Without the Refry

I love these. They taste better than the ones in the can, plus I know exactly what the quality of the ingredients are. Very easy. I cook these overnight. Oh, and if you use black beans instead of pintos, and keep enough of the juice when you mash them, this makes a fantastic vegetarian black bean soup.

Peach Muffins

These are, hands down, the best muffins I've ever had. They were not dry at all, not too sweet, but extremely flavorful. I did not find the need to top it with butter-or anything for that matter! I did make a few changes. I added 1/4 tsp of orange extract, and added a handful of blueberries. I also was a tad bit of afraid of using 1 whole tablespoon of cinnamon, so I used 1 tsp. When I tried the muffin, that seemed enough to me. Also, these were definitely done at 22 minutes (in my oven). Also, I don't know what pans you guys are using, but the batter I had made just one short of two dozen regular sized muffins. I also found that five small peaches equaled to the needed 2 cups of chopped peaches (in case that helps anybody out :) ). This is a fantastic, delicious, healthy, and very fast recipe. Whoopie Pies VII

The rest of the people I served these too were okay with these. I did not like these at all. For one thing, the frosting was way way too salty. Plus it never thickened up, it was very goopy and thin-like a glaze instead of a frosting. The frosting should have had a higher fat to sugar ratio. As for the whoopie sides themselves, they were only okay. Sorry, I will not be trying this recipe again.

Best Big, Fat, Chewy Chocolate Chip Cookie

These are hands down the best chocolate chip cookies I've ever had. They are somehow soft and chewy. They still taste like the dough, but baked. So, so good. The lower amounts of the raising agents in this recipe is what makes these cookies so good. Thanks!

The dough surprised me-it's like a croissant! It was so easy to make. I made it for the first time today. Delicious! I used my food processor to cut down on time and effort and used all natural blackberry preserves. Yum!

Baked French Fries I

These were awesome. I added a teaspoon of Italian seasoning, and used olive oil to coat instead of vegetable oil, and used a half teaspoon of salt. I baked them for 55 minutes and didn't turn them over. They were beautifully crispy and flavorful. Everyone who tried them said that they were the best fries they'd ever had. They were soooooo easy, and not messy at all!! I didn't feel like I was giving up anything by eating these baked ones instead of fried ones. Thanks a bunch for the recipe Ashlee, it's a keeper!!
