Holiday Chicken Salad

I have no idea what all the fuss is about this recipe. Somehow, it was extremely bland. The only flavor I could (hardly) taste was paprika.

Angela's Awesome Enchiladas

This recipe was just OK. I have no idea what the need for so much of the soup mixture is. I would use 1/2 as much as it called for at most to make it creamy. I ended up tasting cream of chicken soup with every bite which I shouldn't when eating a Mexican enchilada.

Chicken Alfredo with Fettuccini Noodles

The texture was wrong, more like a baked ziti-afredo with all of the ricotta cheese. No matter how much I heated the sauce, it remained grainy. Based on suggestions by others', I used half the ricotta and 1.5 lbs of chicken. It calls for way too much butter too. The final product was just OK. Edible, but I wouldn't make it again. Even after I added roasted peppers, garlic, and various herbs, it was actually still quite bland.

Korean Marinated Flank Steak

The marinade is great, but calls for way too much soy sauce. I used about 1.5 cups and I had a ton of marinade left. Instead of flank steak, I used very thin slivers of (I believe) filet mignon, put them on skewers, and grilled them. Quite good.

Megan's Granola

Fantastic recipe. As has been said, the granola crisps up as it cools. I originally cooked for closer to 30 mins because I didn't want any residual moisture, but I think I'll bake for more like 20 mins as directed next time. Mine didn't clump as much as normal granola, but it's delicious nonetheless.

Chicken Korma II

I don't know if this is supposed to be Americanized, but it's quite bland. It tasted fine, it just lacked the flavorfulness of good Indian. At the very least, I'd add 1/8 tsp of cayenne next time. It was also too watery.

Fish Tacos

The Best Meatballs

French Toast Casserole

I know it's called a "casserole", but I found it too eggy. It still tasted good, but I had some issues with the texture as a result of what seemed to me like too much egg mixture. My gf loved it, though. I'll try using less egg mixture next time. Confectioners sugar before serving is a must.

Creamy Corn Soup

I scaled this up to 5 servings. I'm not sure if the calculator didn't work correctly, but the soup is way too watery even after adding extra flour. Not sure how this got so many good reviews because I think the final product is awful. I have no idea how I'm going to eat a pot of this myself...

Chef John's Chicken Tikka Masala

This was as close to tasting like chicken tikka masala as any other chicken dish. I wouldn't even say it was reminiscent of chicken tikka. It was pretty good, however, but I think mostly because of Chef John's choice of chicken thighs instead of breasts.
