Waffles I

This is a very good and easy recipe. The texture was perfect; light with a nice crunch on the outside and tender on the inside. Because I don't use much syrup I like to add a lot of flavor to my waffles instead. I added a 1/4 tsp. of lemon oil along with 1 tsp. of vanilla.

Butter Cake

I had good results with this recipe. It is not the lightest cake but it is not heavy either. It is nice and moist if prepared correctly. I added more flavoring (1 ½ tsp. vanilla/ 1 tsp. orange oil) than the recipe called for. I made cupcakes; therefore the baking time was much shorter, about 25 min. for me. Regarding the dryness issue that some bakers ran into; the length of time in the oven may be the culprit. Also, keep in mind the type of pan used does matter when determining the bake time.

Chicken Makhani (Indian Butter Chicken)

I had to add more spices than the recipe called for. I also added the fenugreek like a poster suggested and heavy cream. I didn't have cashews to use as the thickener but I will be sure to use that in the future. Solid recipe with a few tweaks.

Original Nestle® Toll House® Chocolate Chip Cookies

I always use this recipe but I use white wheat flour, reduce the white sugar to 1/4 cup and add a pkg. of butterscotch pudding mix instead. It's very good.

Old Fashioned Onion Rings

This is a good recipe. I didn't have flour so I used bisquick, omitted the salt and baking powder and used panko bread crumbs. It turned out light and very crispy just like I like it.

Coconut Poke Cake

This was a good recipe with a few minor changes. Unless you can handle really sweet stuff I recommend forgoing the condensed milk. The cream of coconut already has all the sugar needed for this recipe; just warm it slightly in the microwave before adding it to the cake. Also I suggest topping the cake with toasted coconut and homemade whipped cream with a touch of vanilla instead of using frozen whipped topping.

The Best Rolled Sugar Cookies

I wanted a sugar cookie that was easy to work with, one that kept its shape after baking, one that was not too sweet and stayed soft after a day or two in the cookie jar. This recipe accomplished all of the above. In addition, because I prefer a slight lemon flavor to my sugar cookies, I added about a tsp. of lemon zest in addition to the vanilla called for in the recipe. I will be using this as my sugar cookie recipe from now on. Thanks Ms. Saunders!

Pro Ganache

You can't go wrong with this recipe especially if you use good quality melting chocolate wafers instead of chips (chips are harder to melt!). I had smooth results without using the mixer. Also I used espresso powder instead of vanilla to bring out that great chocolate flavor. One more note, don't even bother trying to use this without refrigerating, it will just be annoying to work with. Let it sit in the refrigerator for at least an hour before using.

Simple Scones

This recipe produced light scones with just the right amount of sweetness. I added about a tsp. of vanilla to the sour cream and egg mixture. I also added a 1/2 cup of fresh blueberries to the flour mixture. To give it that bakery look I sprinkled some coarse sugar on top. The sour cream flavor goes very well with the vanilla and blueberries. Good stuff!
