Broccoli Chicken Divan

Great recipe base and even better dish with some modification. I added garlic powder, black pepper, salt free lemon pepper seasoning and some seasoning salt to the chicken while browning on the stove. Near the end of the browning, I added onions for added depth of flavor and bit of sweetness. Frozen broccoli florets were added to the pan after the onions were fully browned, along with the soup, milk and half of the cheddar. I also added whole wheat egg noodles into the casserole for a little bit of carb induced happiness and it was PERFECT. My fiance ate the casserole for days after I made this and still asked for more after he finished it off!

Yummy Honey Chicken Kabobs

My fiance and I made these up last night and they were AMAZING!!! I followed the directions exactly with the exception of placing the chicken and the veggies on separate skewers. Oh, I also put Sriracha in with the marinade because we both like our food spicy. Overall, fabulous dish and we plan on making it again this week and every week after!

Simple Mexican Rice

I was having a group of people over for dinner one night and had planned on serving Chicken Enchiladas V(from this site) but I had no idea what I wanted to serve with them. I stumbled upon this recipe and it fit the bill. I followed the advice of others and just threw in enough taco seasoning for the rice since I had the pre-made handy. Also, I didn't have tomato paste on hand so I used a small can of tomato sauce. It still turned out fine though slightly mushy, which could have been a product of using the sauce as opposed to the paste. I'll have to give this another go when I have tomato paste stocked in my pantry.

Chicken Enchiladas V

Yum. I made mine with rotisserie chicken purchased at the local grocers, shredded and mixed up with a couple of tablespoons of the soup mixture. I have also tried this with chicken thighs I threw in the slow cooker with a bit of broth and taco seasonings. Both seemed to work fine but the rotisserie chicken was less time consuming. Also, I stirred in a couple of small cans of green chilies and a couple cans of green enchilada sauce stirred into the soup mixture and it adds such amazing flavor. I was really wary of making enchiladas with cream of chicken soup but it turned out awesome!

Jalapeno Popper Spread

Love love LOVE it! Tastes exactly like it's title states. Didn't change a thing but I'm still experimenting with different things to dip into this. You've got to try this recipe, it's amazing!

Guacamole

I love this guacamole! Pretty much followed the recipe exactly except I added a bit more cilantro (I love the stuff), RED onion, diced jalapenos and quite a bit more cayenne because I love my guac with a whole lot of bite. Also, I don't like super mashed guac so I smashed a couple of the avocados and cut the last in chunks for texture variety. Definitely tasty and doesn't keep me in the kitchen too long, especially when chips and guacamole are my dinner for that night!

Emily's Famous Hash Browns

I finally found my hash browns recipe! My fiancé and I have both tried to make hash browns in the past and unfortunately, they never came out the way we like them. Crispy golden and yummy. We tried this recipe exactly as written and they were PERFECT.

The flavor was just "meh" for me...I normally like flavors with more complexity and I should have known better than to try a recipe when the only real seasoning was soy sauce. I don't think I'll try it again.

Fried Rice with Cilantro

I've made the original recipe and though it was pretty good, I felt there were a couple of things that could be added and subtracted from it. I left out the basil because I like a more subtle flavor in my fried rice and I didn't see the need for sugar. My personal modifications included adding eggs(which were flavored by fish sauce and a bit of salt), maggi seasoning sauce, fresh ground black pepper and sesame oil. The end result is an amazing flavorful fried rice!

Kalua Pig in a Slow Cooker

I've been making this recipe for the past year or so and I can't believe I haven't reviewed it yet. It's quite possibly the EASIEST and TASTIEST recipes I've ever tried! I first made it following the recipe exactly and it tasted great but I decided to kick it up a bit. I modified it by adding some fresh garlic/garlic powder, onion powder and fresh black pepper. I cook it on high for about 4-6 hours then lowering it to low for a few more hours depending on when we end up eating dinner. I also add a whole bunch of cabbage in the last hour or so of cooking because I adore pork and cabbage. Serve it with some jasmine rice and sriracha and it's one of my favorite meals ever. Being that it's only my fiancé and myself, we end up having a TON of leftovers which we feast on for a couple of days. Not that either one of us are complaining! *sigh* this dish always makes me wish I were back on vacation in Hawaii!
