Broccoli Chicken Divan
Great recipe base and even better dish with some modification. I added garlic powder, black pepper, salt free lemon pepper seasoning and some seasoning salt to the chicken while browning on the stove. Near the end of the browning, I added onions for added depth of flavor and bit of sweetness. Frozen broccoli florets were added to the pan after the onions were fully browned, along with the soup, milk and half of the cheddar. I also added whole wheat egg noodles into the casserole for a little bit of carb induced happiness and it was PERFECT. My fiance ate the casserole for days after I made this and still asked for more after he finished it off!

Yummy Honey Chicken Kabobs
My fiance and I made these up last night and they were AMAZING!!! I followed the directions exactly with the exception of placing the chicken and the veggies on separate skewers. Oh, I also put Sriracha in with the marinade because we both like our food spicy. Overall, fabulous dish and we plan on making it again this week and every week after!

Simple Mexican Rice
I was having a group of people over for dinner one night and had planned on serving Chicken Enchiladas V(from this site) but I had no idea what I wanted to serve with them. I stumbled upon this recipe and it fit the bill. I followed the advice of others and just threw in enough taco seasoning for the rice since I had the pre-made handy. Also, I didn't have tomato paste on hand so I used a small can of tomato sauce. It still turned out fine though slightly mushy, which could have been a product of using the sauce as opposed to the paste. I'll have to give this another go when I have tomato paste stocked in my pantry.
