Artichoke Bruschetta

This was just okay, I think there are better artichoke dip recipes out there ~ and many of them could be prepared as bruschetta if wanted.

Penne with Mushrooms

Love it. I didn't use as much olive oil and used smart balance instead of butter. I sauteed my mushrooms alone for about 15-20 on high heat until they carmelized and then I turned the heat down and added lots of extra garlic. I added some peas (right before the garlic) to add some veggies.

Quinoa and Black Beans

Parmesan Knots

Really easy to make. I used the inexpensive buttermilk roll option. I also made them into hearts for Valentine's Day - bit hit. Did I mention how easy they are?!!

Mediterranean Chik'n and Artichokes

I love this recipe - I make a few changes. I started by using a regular onion and stick in in the pan to start carmalizing, then I add in the red pepper, then the chik'n and add a bit of the artichoke oil at this point (if I don't have artichoke oil I add extra olive oil and some basil and oregeno), then at the end I throw in the artichokes. I use a flavored cous cous (I like the mushroom flavor), mix it all together and sprinkle with some feta. I will often mix in a diced tomato (before the artichoke) and fresh basil if I have it. I serve the olives on the side (because of a picky husband).

Peanut Butter Noodles

I make this dish all the time and it is always a hit. I've made it with soba noodles and with whole wheat spaghetti noodles, enjoy it both ways. I always double (or triple) the sauce and add tofu (which I brown in a little olive oil first) and broccoli (sometimes I brown it with the tofu or just put it in with the noodles and steam it some) to it. I work on the tofu and broccoli after I get the sauce together and the noodles cooking ~ making it a fast and fairly easy meal. I usually leave out the green onions and chile paste due to preference. Thank you for the recipe, I love it!
