Rhode Island Clam Chowder

About this Cook
Learned at age 56 that I, my Mom and daughter have sensitivities to wheat (+ corn for me)! We had different symptoms. Mine was debilitating arthritis. Cutting wheat out of our diet was an easy choice: walk or eat wheat. It forces me to explore the goodness of all the foods that I haven't been eating. Half of my diet is now fruits and vegetables, 1/4 meat, and 1/4 rice, potatoes, rice, rye, oats and such. My biggest cooking mistake is multi-tasking elsewhere in the house WHILE cooking. And, our pans show it. I need to cook things that either have a very short cook time (so I can't leave the kitchen) OR have a huge cooking-time tolerance.

Manda's Seven Layer Taco Dip
We use this as a main dish! Omit the cream cheese and sour cream, and add the seasoning to the refried beans. We prepare a bed of lettuce on individual plates and top it with the remaining mixture. So, if we don't eat it all, the lettuce doesn't wilt. Had to search for the pickled jalapeno pepper slices, but well worth it. So unique and fresh tasting. Love it!

Tomato, Basil, and Feta Salad
Perfect as is. We don't change a thing unless we don't have an ingredient. Just the usual substitutions: cherry tomatoes, any kind of basil (in jar or dried). The cucumbers don't stay fresh very long, so I usually add them about 30 minutes before serving. One of our favorites.

Mexican Rice I
Tripled the cumin and chili pepper, almost a whole can of roasted diced tomatoes (semi drained) and the sauteed onion were all added for the last two minutes of the rice. Used a rice maker. Easy and excellent. Don't even like lots of spice, but "as is" is bland. Will add black beans next time to make this a main entree for a vegetarian meal.
