Empire State Muffins

These muffins are a nice, not too sweet treat. I gave a lower rating, because if you do not eat them the first day, they do not hold up well in taste.

Mango Chutney

This was the first time I have ever made chutney and I thought this was an excellent recipe. I made half the recipe and you still have more than plenty to share with your friends. After reading about the chili pepper quantity making this very spicy I decided to use only one chili pepper. That was a mistake on my part I could have used 2 and it would have had the kick that chutney is supposed to have. Just a note: You can buy ginger and garlic paste at the indian grocery and use that in place of the fresh ginger root and garlic clove.

Grandma's Slow Cooker Vegetarian Chili

Sherry Wine Sauce Chicken

This recipe needed some work. I added 1tsp Thyme. I only used 1 can of each cream of... and 4 oz sour cream. Add to this a cup of half and half so it is not so thick. I also chopped and sauted an onion and to make a pot pie kind of filling added fresh peas,carrots and potatoes. Serve this with some bisquits and you have an easy dinner.

Fresh Broccoli Salad

My family raved about this salad! All I did was decrease the sugar to 1/4 cup and mayo to 1/2 cup. I never saw broccoli go so fast. Needless to say next time I will double the recipe.

Simple Beef Short Ribs

I omitted the olive oil and butter from this recipe. There is enough fat in the beef. Added a few more cloves of garlic and used onion soup mix and 1 cup water because I did not have any beef broth. After browning the beef and the onion garlic mixture, I deglazed the pan with the onion soup and then the beer and poured it all in a slow cooker, with a few chunks of carrots, on high for 3 hours. Serve it on noodles or rice. What a wonderful treat!

Marble Crumb Cake

Wonderful -go to recipe. I doubled the crumb part, just because we love a dense crumb top. To make this cake quicker; I skipped the melting of the chocolate and just added the chips to the batter. It does have to cook 10 min longer than the 30 minutes it calls for. It has a nice coffee cake density with some moisture. Don't expect a birthday cake moisture.

Baingan Bharta (Eggplant Curry)

I make this all the time and you just can't stop eating it. I cut the eggplant in long strips when cooking. Serve this with rice or naan.

Curried Mango Chicken

Doubled the recipe and served with fresh mangos as well as the mango chutney I made from this site. Placed it on a bed of brown rice. Excellent dinner and faster than ordering out!

I agree with the people who have said this recipe is tasteless. I followed it word for word and this meal had no taste. Also, cooking the pork chops for that long just makes them overcooked.

Peas and Celery

This was a very nice quick dish. I would reccomend precooking the frozen peas a bit and draining the water from them. I used salt and pepper to taste instead of lemon pepper.

Spinach Brownies

Wonderful recipe once you add the garlic, itailian seasoning and feta. As many recommend the butter should be cut down to 2-4 tsp and that is what you saute the onions and garlic and spinach with. Great idea to put into mini muffin tins to use as an hors d'ouevre

The taste was there for anice butter cookie. I followed the directions to refridgerate the dough before baking and still had flat thin cookies that looked nothing like a finger. Not sure what that secret is???

Cantaloupe Bread with Praline Glaze

Excellent way to use up ripe cantaloupe. I didn't use the glaze because the bread is sweet enough. My friend said it could use some nuts, so next time I will put the nuts is the bread. I swirled a cinnamon sugar swirl through the bread before baking, that is where I will add the nuts as well.

Lemon Mushroom Herb Chicken

This recipe is simple and delicious. I dipped the chicken in beaten egg and then into flour mixture. I am allergic to lemon juice so I only used the zest of the rind. Will be serving this one over and over again.

Bow-Tie Pasta With Red Pepper Sauce

Not at all what I was expecting. The combination of vinegar and honey made this dish a sweet and sour sauce. I didn't think that blended well with the red peppers at all. I wouldn't even try to tweek this recipe.

Tofu Peanut Stir-Fry

Wonderful flavors. I took a combination of suggestions: Fresh veggies, stir fried with chinese 5 spice in very little canola oil. Added tofu (not fried) that had been flavored with 5 spice and a touch of Kecap (a sweet soy sauce). Served this mix over a bed of asian noodles with the "The best Thai Curry Peanut sauce" (from this website) as suggested. You will make this again and the fat content has been cut back drastically so enjoy!

Classic Bran Muffins

I too substituted the applesauce for the oil. I added 1/2 cup whole wheat flour and cut the white flour to 1/2 cup. Also added 1/2 cup wheat germ and or flaxseed. These muffins are GREAT!
