Acorn Squash

My acorn squash was fairly big and cutting in half seemed dangerous - so I microwaved it 2-1/2 minutes on high. MUCH easier to cut in half!!!

Oatmeal Chocolate Chip Cookies I

Fantastic recipe. But DON'T GREASE THE COOKIE SHEETS; use parchment paper and NO CLEANUP. Also I followed other reviewers comments: used butter and 3 cups rolled oats plus the 1 tsp vanilla. Cookies NOT FLAT! 10 minutes is enuf!

New Mom Broccoli Kugel

Excellent! Thanx JerusaleMom! I call my version: Fresh Broccoli/Cheese Kugel: After seeing a good buy on 4 crowns of broccoli, I chopped finely, put it in large bowl, and set aside. In other large bowl, beat together: 6 eggs, 2 T chicken powder, 2 cups ricotta (500g), 1 stick grated sharp cheddar, 1/2 cup mayo, dash of pepper, and previously sauteed & chopped onion & 5 cloves garlic. Pour this mix over broccoli, mix again, pour into well-buttered deep baking pan. Baked 55 min at 375. Enjoy!

Chicken with Curry Dill Sauce

I served this to 18 people - so adjusted the sauce quantity. Excellent suggestions by others to double the dill and curry. Only change I made was to keep it warm in my large crock pot and then added more milk because the sauce continued to thicken. Great recipe!

Baked Macaroni and Cheese with Tomato

FANTASTIC AND BEYOND EASY! I cook for 12-16 every Sunday. Double this recipe and change quantities of ingredients as follows: 2 lbs pasta, 2 cans chunk tomatoes w/sauce, 6 cups milk, 6-7 cups shredded sharp cheddar, 2 sticks butter (1 for topping), 6-9 cloves garlic if desired, 1 tsp salt. Add topping last 30 minutes - 1 cup dry bread crumbs, 1/4 cup parmesan cheese, and other stick of butter/melted. Bake 1-1/2 hours in huge oiled pan. (You might like to save half the cheddar for sprinkling on top of bread crumbs). 5 Stars +

'Secret' Salad Dressing

Wow - great tasting and easy, easy, easy. ONLY because I wanted it less sweet, I cut the sugar in half. And tried a variation of substituting the ketchup with plain yogurt, and added a 1/2 tsp of dill. This variation is terrific. I used it for salads and over baked potatoes.

Slow Cooker Escalloped Chicken

Balsamic Cream Sauce

Fantastic sauce. I added chopped mushrooms,and lots of sliced garlic, and topped with fresh minced parsley. My son said mix half the sauce into the pasta and pour the rest over the top. Loved it - even using 1/2 cream and 1/2 milk. Update: w/2 lbs pasta I use 1/2 c olive oil, 1 chopped onion, 1 cup balsamic vinegar, 3 lrg portabello mushrooms chopped, 6 T chicken bullion, 1 qt milk, 3 c heavy cream, 2 8-oz pkgs Sargento parmesan. LOVE IT for 12-16 people!!!!
