Rich and Creamy Tomato Basil Soup

I made this soup tonight for dinner! It was fantastic. I followed some of the other suggestions. I tossed in a tbsp of sugar and about 1/4 cup of light cream cheese. I used about 1/4 cup of butter and 1/2 cup of cream. I didn't use any salt either. It was salty enough!!!

Onion Roasted Sweet Potatoes

Yum Yum Yum!!! These were incredibly tasty. I mixed the oil and soup mix in a large freezer bag and tossed the potatoes in the bag until well coated. I spread them out over two cookie pans. I flipped them every 15 minutes or so. After about 30 minutes there was some burning of the onions. I reduced the heat for the remaining 15 minutes. If the onions didn't burn, I would have rated this a 5! Regardless, I will be making these again... and again... and again!!!

PJ's Sweet Potato Mash

WOW. I haven't found a mashed sweet potato recipe that I have loved.... until now!!!!! I like a number of the other reviewers was a bit nervous about the horseradish.... I didn't need to worry at all. I played the guess the secret ingredient game with my husband... He never guessed.

This was very good. I made it exactly as the recipe stated and I was impressed. I will make it again, although I will cut back on the butter to see if it is less greasy!

New Wife Tuna Salad

I have been shopping for a good tuna salad recipe for some time and haven't found won that made me want seconds. I was a bit skeptical of this one because of the egg, but let me tell you it was amazing!!! I made two batches in one week! I kept the recipe fairly true, however I did change a few of the following things: I omitted the celery seed, used green relish instead of the dill pickle and added dried dill to the recipe. I also used a bold mustard! Yum!
