This is THE best lasagna I've ever made, and as of today, I'm throwing out all my other lasagna recipes and putting this one front and center! I took the advice of other reviewers about soaking as opposed to cooking the noodles and also about spending a minimal amount of time cooking the sauce. I assembled the dish the night before and cooked it for company the following evening. Other than extending the cooking time because the lasagna was completely chilled and took longer to cook through, I followed the recipe as written. I loved the ease of using mozzarella slices as opposed to shredded cheese and found that 2 8-oz. packages were enough to do 2 layers, but not enough for the top. I had a 2-cup bag of shredded mozzarella on hand and used that. It made a nice and cheesy layer for the top. (I sprayed a piece of foil with cooking spray before putting it on the top of the lasagna so the the cheese didn't stick...worked like a charm.) The left-overs the next night were JUST as awesome! FANTASTIC recipe!!!
