Caramelized Brussels Sprouts with Pistachios

Very good. I didn't have any pistachios so I just chopped some walnuts and added those. Very tasty. I'll probably have this again.

Coconut Macaroon Brownies

The flavor of these brownies is excellent! I gave it a 4 instead of a 5 because, like many, the brownie is more like cake and I like my brownies more dense. Also, they were a little dry so I think the baking time could be shortened up a bit to help with this. I like the idea that many have about using their favorite brownie recipe and using this filling.

Zucchini-Coconut Cookie Bars

This is so good!!! I made it exactly as the recipe is and it's moist, sweet, a little chewy with the dates and the coconut justs adds that little something extra. I will definitely make these again. Next time though, I'll probably just put the nuts in the batter and then bake. The nuts look pretty on top if I was taking them over to a friends or for something special, but just for at home, I'll add them. Thank you!!!

Easy Mexican Casserole

Yum! Now this is comfort food. I rated in a 4 because I made a couple of changes. I only used 2 cups of crushed chips as suggested by another and I put 1/2 pkg of taco seasoning in the beef, again as recommended by another. I don't like black olives so I left those out. Next time I am going to add a few green chiles to it.

Tzatziki Sauce

This is excellent. I took the advice of another review and drained my yogurt overnight in cheesecloth. I put all ingredients in my food processor and just pulsed it a few times to keep the cucumber a little chunky. I used fat free yogurt and think it would be better with a LF or regular yogurt. I think next time I'll try the greek yogurt as someone else recommended.

Broccoli Salad I

Good combination of ingredients in the salad, however, I thought the dressing was bland. I took one suggestion and even let it sit in the refrigerator for several hours before eating to blend the flavors. This is not one I will make again.
