Chicken Souvlaki with Tzatziki Sauce
Very good- used pork instead of chicken and added rosemary sprigs to marinade

Eggplant Parmesan II
This is a good recipe, but I think the step of laying the slices out with salt is important. I did blanch my slices for about 1.5 min. as well. I also had to cook my eggplant slices for 15 minutes on each side to get the crispy crust I was looking for. I did use a seasoned panko crumb, so maybe that takes longer to brown up. Otherwise- It turned out delicious!

California Grilled Veggie Sandwich
This is a really wonderful recipe! I do recommend to double the mayo,garlic, lemon sauce. I used an 8" round focaccia, cut it in half and thinned it out. I then spread the mayo mix on both halves, stacked the veggies and cheese, put the top on, wrapped in tin foil, then baked for about 20 min. in a 350 degree oven. My boyfriend wasn't overly excited about a "veggie sandwich" for dinner, but he ended up loving it!
