Soft Oatmeal Cookies
This was probably one of the best oatmeal cookies recipes I've tried. I didn't have any raisins or chocolate chips, but I had a bag of Heath toffee bits leftover from Christmas. I have had several people tell me that these were the best cookies they've had in a long time... even my husband who is a picky cookie eater! I didn't find that I needed to refridgerate the dough or flatten the balls. This is definately a keeper!

One Dish Chicken and Rice Bake
I've made this a few times now, trying different variations. So far the hit has been to use Cheddar Cheese soup instead of the Cream of Mushroom. I also added in about 3/4 cup of shredded cheese and about 1/4 cup extra water. It does come out a little bland, but I haven't figured out what to add to it yet to give it the right flavor, maybe worchestershire sauce? Although, the last time I did it with the cheese soup & cheese, my husband had seconds - which he very rarely does, so it musn't have been too bland!

Yummy Yam and Pineapple Casserole
I made this for our Christmas dinner yesterday. Everyone liked it. I think next time I would only use 1 can of pinapple, and 1/3 or 1/4 pound of the currants (actually used golden grapes as I couldn't find golden currents). It's a easy recipie and since there's no butter or heavy cream, I didn't feel gulity eating a second helping!
