Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

LOVE this dressing. I didn't use salt and didn't use as much oil (I love a tangy dressing that makes you pucker a little bit). I like garlic powder in it, so the dressing is smooth, no chunks. Also, I used half rice wine vinegar and half red wine vinegar. I used it as a marinade for veggie kebobs and also over salad. I am making a tortellini pasta salad this wknd and CANT wait to try it with this tangy dressing. YUM

Banana Blueberry Muffins

If these were titled, "healthy" I would have given it 4 stars. They're definitely a little bland, but if you want a healthy non greasy muffin, this is it. I used 2 eggs bc didn't want to waste 4. I did sprinkle cin/sugar on top (before baking) like others suggested but it wasn't strong enough. If I make these again, I won't add the topping, but I will split a hot muffin (after baking) and sprinkle cin/sug in it before eating. The more blueberries, the sweeter, so don't skimp! In my oven these rose nicely and were done after 18-19 minutes. I only got 11 muffins.

Spicy Chicken Breasts

I love how this is so quick, yet so flavorful. No need to marinate for hours. I saved half the seasoning rub to use later (I only cooked 2 chicken breast). They were great on the grill, and spicy but not too hot all. I don't think I like thyme so I just used a little.

Italian Style Meatloaf I

I only used 1 egg, and omitted the shredded cheese. Mixed ketchup in the loaf, cooked with tinfoil over it for 1 hr, removed tinfoil, glazed with more ketchup and broiled for about 6-8 minutes. Very good. I loved the full can of diced tomatos in it. I also used raw chopped onion and green pepper which cooked perfectly inside the meatloaf.

Oatmeal and Applesauce Pancakes

Pretty good. Not the best pancakes I have had but they're decent. Maybe add fresh cut apple chunks next time or a little brown sugar. It was definitely missing something.

Chili-Lime Chicken Kabobs

Used only 2 TBSP oil and increased to 2 TBS red wine vinegar. Use juice of 2 limes and you can even scrape the pulp into the marinade. Skipped the cayenne bc even though I love hot, I wanted a more citris flavor. I also tossed in a little pineapple juice bc I was putting pineapple on the skewers. Very light and delicious.

Pizza On The Grill II

No need to oil dough or grate. I have been making this for a long time. Have 2 people hold the ends of the dough (I make a large rectangle shape to fill the grill space), and toss it on the grill. If it comes out as an irregular shape- who cares?! Once it's ready to flip, take it off so you don't burn your hands/arms, add toppings. put it back on the grill and close the cover so everything melts.

Banana Crumb Muffins

Low fat- still AMAZING!- So moist and delicious. I don't know why people use white flour. Whole wheat flour, (I will also sub 1/4 cup ground flax seed or quick cooking oats for some of the flour next time), egg white substitute, and no butter or oil needed. I used natural applesauce instead, added 1 TSP vanilla and few shakes of cinnamon. Also did 1/2 white and 1/2 brown sugar in muffin mix. I ended up w/12 muffins and I put dark choc chips in abt 5 of them. Both ways are to die for.

Jacky's Fruit and Yogurt Muffins

Made healthy-I used 1.5 cups wheat flour and .5 cup quit cooking oats, worked just fine. I cut the sugar in half and they weren't very sweet, but that's ok. Used fat free yogurt and frozen blueberries. Yummy!! I'd say it was a nice mix between muffin and bread. Maybe if I made it more sugary it'd taste a little better but to keep it healthy, this is still a treat!

Avocado Feta Salsa

I made a variation of this for a side dish to go with chicken. I added chopped cucumber and corn. Didn't have feta but I'm sure it'd only be better with it. Nice textures and a variety of flavors with this! Yummy and healthy.

Buffalo Chicken Wing Soup

Great idea, great taste. I mix it up w/cans of cambell's low fat cream of (chicken, brocolli mushroom, whatever). I don't really like cream of chicken's taste so might skip it in the future. I didn't have sour cream so I used cream cheese, also tossed in sliced celery and COOKED potato cubes. If you put them in raw they stick to the bottom of the pot. Played with the milk and hot sauce to my liking. Topped with a few ranch croutons. Everyone raved and asked for the recipe.

Whole Wheat Blueberry Pancakes

So good! Added 2 tablespoons of ground flax seed and a little water to even out the consistency. I also added a splash of vanilla. You don't need sugar if you're eating with syrup but I sprinkled in some brown sugar instead of the fake stuff. Next time I won't need it.

Guacamole

So easy and so good. This was my first attempt at guac and I doubt I'd try a different recipe. I love the lime and cilantro in it. I forgot to put in the garlic and it was amazing anyways. I tossed in some corn as well for sweetness and crunch :) We ate it with baked tostidos and celery sticks.

Great way to use up veggies before they go bad! You can make them spicey or cheesey, or packed w/protein and healthy. I dipped mine in red sauce and ate plain. Both ways were yummy.

Cottage Cheese Chicken Enchiladas

Great base to start with. You can add/ommit to your liking. I had leftover red sauce so i added some taco powder and medium salsa and used that for the pan and to pour over enchiladas. I used low fat sour cream and cottage cheese and no shredded cheese (dieting). No oil needed. If you're dieting and craving Mexican this does the trick!

Busy Day Chicken

Didn't want to give a bad rating just because of how mine came out. But I am thinking it was from the sauce I used? I had chicken marinated in Kraft Honey Mustard BBQ, didn't feel like grilling it, so i threw it in the crock pot and added some onion and apple slices.
