Rainbow Veggie Chili

Very good! I didn't have chili beans so I used red kidney beans and added some spices instead. I also added celery, cumin, a can of garbanzo beans, and some cheddar cheese on top. I had to add a little water to this because of the extra veggies because it was too thick for me. Makes a very big batch! Can't wait to eat it again though.

Ratatouille

I love this recipe. I have made it several times now. I usually include a summer squash in place of one of the zucchinis to mix it up, and I use red bell pepper instead of green because of personal preference. I use mozzarella cheese sometimes too in place of parmesan. Delicious!

Easy Portobello Mushroom Saute

Very good! I followed the recipe, except I left out asiago cheese (didn't have any) and used plain olive oil and minced garlic instead of the garlic flavored olive oil. Will definitely make this again. Thanks!

Bacon and Cheddar Stuffed Mushrooms

Well, I know this says "BACON and Cheddar Stuffed Mushrooms", but I omitted the bacon because I am a vegetarian. Instead, I used a green bell pepper which I sauteed with the onion, and a little bit of garlic. I also added a little black pepper, cayenne pepper, and parsley to the mix. It turned out great even without the bacon!

Lyonnaise Potatoes

This was really tasty...I did add extra garlic and reduced the butter (to reduce fat) and they came out very flavorful. I also boiled the potatoes longer based on the other reviews, and sliced the potatoes a little thinner than 1/2 inch to satisty personal preference. I will be making this again!

I have made this twice now. It is now in my top 3 soups to make (and soups are my favorite thing to make). You definitely want to use quality olive oil...it really makes the dish. This is a comfort food, and I can't wait to make it many more times, especially this winter. I give it 5 stars because it really doesn't need any altering from the original recipe and it is VERY delicious.

Cauliflower-Cheese Soup

This was pretty good. I made it exactly as written, and I actually wasn't that impressed with the soup the first bowl I had. I thought it was just okay and wasn't planning on making it again. Well, the next day I decided give it another try and reheat some while taking the advice of some of the other reviewers (to puree some or all of the soup). So I added a very small amount of milk to a hand blender to the soup and pureed it, and I liked it MUCH better this way. For some reason, it made a HUGE difference whether or not to leave it "chunky" or puree it.

Eggplant Tomato Bake

Lentil Soup

It was okay. Not enough vegetables and too many lentils, making it bland, in my opinion. Also I had to add so many spices and salt to make it taste okay. Probably won't be making this again, but it is a decent base recipe.
