Thai Curry Soup

This had excellent flavor and we LOVED it. Would have gotten 5 stars except that the lemongrass remained hard and crunchy. Like eating cut up straw in your soup. Will definitely be making again either without the lemongrass or with the lemongrass in a tea strainer for easy removal.

Slow-Cooker Corned Beef and Cabbage

Turned out great! I have made corned beef and cabbage twice before and my husband complained about the cabbage being mushy, but not with this recipe. I substituted some of the water for a beer, added garlic, 2 Tb sugar and 2 Tb apple cider vinegar and the recipe was perfect.

Country Green Beans

I made this for company and I loved it, they loved it and my husband loved it. My husband immediately asked for it again and gets very excited if I tell him I am making green beans this way. WONDERFUL

Microwave Corn on the Cob

I love to use the wet paper towel and leave the husk on. Overkill maybe, but it doesn't dry out and the silks come off the corn so much easier when it is cooked :)

Tangy Cucumber Salad

I followed the recipe except for the salting/drying of the cucumbers because I was in a hurry. When I tasted it, the prevalent taste was oil with with also a strong vinegar flavor. None of the other flavors came through and I really didn't like it. I added about a quarter cup of italian salad dressing and two tablespoons of sweet and spicy sandwich mustard and loved it. I can taste the spice from the mustard powder and the mustard and the overall flavor is excellent. Possibly if I had been patient and marinated for a few hours before tasting, the original recipe would have worked.

New York Rye Bread

I made this without a bread machine (although the kitchen aid mixer does about as much of my work) and it was wonderful. Very fluffy, great texture and delicious. I added all the dry ingredients plus the oil to the mixer bowl while mixing the warm water, honey, yeast and milk powder together and let them sit for 10 minutes. Then I added the liquid (1 1/4 cup water and about another tbl spn added during the kneading) and let the machine knead for about 5 minutes. I let it rise in a warm place (greased bowl with tight lid floating in a sink of warm water) for 45 minutes, punched it down and put it in a warm oven for 5 minutes and then took it out while the oven pre-heated. Baked for 40 minutes @ 350. My husband says I "bake good bread."

Saucy Sheperds Pie

TOO SALTY!!! Perhaps I should have realized that a tablespoon of salt in the potatoes and another in the meat was way too much and that maybe it was really supposed to read "t," but I didn't and this turned out very salty. All the other flavors were good and I will definitely be making this again, but without so much salt.

Beer Braised Irish Stew and Colcannon

Really really good. I made it with Irish Champ instead of Colcannon because I didn't have cabbage, but the recipe was wonderful. I will be making this again and again.
